A hearty and flavorful Ground Beef and Potatoes skillet dish featuring tender cubed potatoes, lean ground beef, aromatic spices, and fresh vegetables. Perfect for a quick and satisfying meal served over rice or tortillas with optional toppings like sour cream and cheddar cheese.

Ingredients

Vegetables & Herbs

  • 1 pound potatoes (yellow or white), peeled and cut into ¼’’ cubes
  • 1 small yellow onion, diced
  • 2-3 cloves garlic, minced
  • 1 red or green bell pepper, diced
  • 1 jalapeno, minced (remove seeds for less spice)
  • ¼ cup chopped fresh cilantro

Meat

  • 1 pound 90% lean ground beef

Oils and Sauces

  • 1 tablespoon canola oil
  • 1 tablespoon Worcestershire sauce

Spices

  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • Fresh black pepper, to taste

Instructions

  1. Prepare Potatoes: Peel and rinse the potatoes, then cut them into small ¼-inch cubes. Heat the canola oil in a large heavy-duty pan or skillet over medium-high heat. Once the oil is hot, add the potatoes and cook for 4-5 minutes, stirring occasionally, until they turn golden and are almost softened inside. Remove the potatoes from the pan and set aside.
  2. Cook Beef Mixture: Using the same skillet, add the ground beef, diced onion, and minced garlic. Cook the beef, breaking it apart with a spatula, for 3-4 minutes or until it browns evenly. Next, add the diced bell pepper, minced jalapeno, Worcestershire sauce, and all the spices (garlic powder, smoked paprika, cumin, oregano, salt, and black pepper). Continue cooking and stirring for another 3-4 minutes until the bell pepper softens and the beef is fully cooked.
  3. Combine Ingredients: Return the cooked potatoes to the skillet with the beef mixture. Sprinkle chopped fresh cilantro on top and gently mix all ingredients together. Cook for an additional minute to ensure the potatoes are fully cooked and the flavors meld.
  4. Serve: Serve the ground beef and potatoes immediately over rice or wrapped in tortillas. For extra flavor and richness, optionally top with sour cream, shredded cheddar cheese, and additional chopped cilantro.

Notes

  • For a milder dish, remove the seeds from the jalapeno before mincing.
  • Using 90% lean ground beef keeps the dish flavorful but not overly greasy.
  • This recipe is versatile; feel free to add other vegetables such as corn or diced tomatoes.
  • Make sure to cook the potatoes until just tender, as they will finish cooking when mixed back in with the beef.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
