This Grilled Green Bean Salad is a vibrant and healthy side dish featuring tender, charred green beans topped with tangy feta cheese, fresh dill, chives, and a splash of lemon juice. Perfectly grilled for a smoky flavor, this salad is simple to prepare and ideal for warm-weather meals or BBQ gatherings.

Ingredients

Green Beans

  • 1 ½ pounds green beans, trimmed
  • 2 teaspoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Toppings & Dressing

  • ¼ cup crumbled feta cheese
  • 1 tablespoon chopped dill
  • 2 tablespoons chopped chives
  • 1 tablespoon lemon juice

Instructions

  1. Preheat Grill: Preheat an outdoor grill to medium-high heat to ensure it’s hot enough for grilling the green beans evenly.
  2. Prepare Beans: Place the trimmed green beans in a mixing bowl. Drizzle with extra virgin olive oil and season with kosher salt and black pepper. Toss the beans to coat them evenly in oil and seasoning.
  3. Grill Beans: Place a grill basket on the preheated grill and transfer the seasoned green beans into the basket. Close the grill lid and cook, stirring every couple of minutes, until the beans are tender and have charred spots, about 8-10 minutes.
  4. Assemble Salad: Remove the green beans from the grill and allow them to cool slightly. Transfer them to a serving bowl and sprinkle with crumbled feta cheese, chopped dill, chopped chives, and lemon juice. Gently toss everything together until well combined.
  5. Serve: Serve the grilled green bean salad warm or at room temperature for a fresh, flavorful side dish.

Notes

  • Use a grill basket to prevent the green beans from falling through the grates.
  • Adjust cooking time if you prefer beans crispier or softer.
  • Fresh herbs like dill and chives add vibrant flavor but can be substituted with parsley or basil if desired.
  • This salad can be served as a side or a light vegetarian main dish.
  • Leftovers keep well in the refrigerator for up to 2 days; reheat gently or serve cold.
