Ingredients

Dough

  • 1 1/4 cups Greek yogurt (6%)
  • 1/4 cup milk
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla bean paste
  • 3 1/3 cups self-rising flour (plus more for dusting and if needed)
  • 2 tablespoons butter (melted)

Filling

  • 1/3 cup brown sugar
  • 2 tablespoons cinnamon

Glaze

  • 1/2 cup Greek yogurt
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla bean paste

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and prepare an 8x11 inch baking dish by brushing it with some melted butter to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, combine Greek yogurt, milk, maple syrup, and vanilla bean paste. Stir with a spatula until well mixed.
  3. Add Flour and Form Dough: Gradually add self-rising flour to the wet mixture. Stir initially with a spatula, then use your hands to knead the dough until it becomes thick and no longer sticky, adding more flour if necessary.
  4. Roll Out Dough: Place the dough on a lightly floured surface and roll it into a large rectangle approximately 11 by 8 inches. It doesn’t need to be exact but should be large enough to cut into 10 pieces later.
  5. Butter the Dough and Dish: Brush the top of the dough evenly with some melted butter. Also, brush the bottom and sides of the baking dish with the remaining melted butter.
  6. Add Cinnamon Sugar Filling: In a small bowl, mix brown sugar and cinnamon thoroughly. Sprinkle this mixture evenly over the buttered dough.
  7. Form Rolls and Bake: Carefully roll the dough tightly along the length to form a log. Slice into 10 equal pieces and place them cut side up in the prepared baking dish. Bake for 30 minutes or until the rolls are puffed up and lightly golden.
  8. Prepare Glaze: While the rolls bake, whisk together Greek yogurt, powdered sugar, and vanilla bean paste in a small bowl until smooth.
  9. Glaze and Serve: Remove the cinnamon rolls from the oven and allow them to cool for about 2 minutes. Drizzle the yogurt glaze over the warm rolls and serve immediately for best taste.

Notes

  • If the dough is too sticky, add self-rising flour gradually until it reaches a workable consistency.
  • Use Greek yogurt with about 6% fat for best texture, but you can adjust based on preference.
  • Vanilla bean paste can be substituted with vanilla extract if unavailable.
  • These cinnamon rolls are best enjoyed warm but can be stored in an airtight container for up to 2 days.
  • Reheat gently before serving to bring back softness.
  • For a dairy-free version, substitute butter with a plant-based alternative and use dairy-free yogurt.
