These Greek Yogurt Biscuits are a quick and easy drop biscuit recipe that uses simple ingredients like flour, Greek yogurt, baking powder, and salt. They result in tender, lightly golden biscuits with a slight tang from the yogurt. Perfect for a quick breakfast or a savory snack, they require minimal prep and bake time, making them an ideal comforting treat.

Ingredients

Dry Ingredients

  • 1 cup flour (any kind — all-purpose, whole wheat, or einkorn flour)
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt

Wet Ingredients

  • 1 cup Greek yogurt

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Prepare a large baking sheet by lining it with a silicone baking mat, parchment paper, or spraying it very thoroughly with cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt until evenly combined. This ensures your biscuits will rise properly and have balanced seasoning.
  3. Combine Wet and Dry: Fold the Greek yogurt into the dry ingredients using a spatula. Stir slowly and gently until a sticky dough forms. The dough will be sticky and slightly wet, which is expected for drop biscuits.
  4. Form Biscuits: Using a large spoon, drop spoonfuls of the sticky dough onto your prepared baking sheet, spacing them evenly. Do not attempt to shape them by hand; the rough, dropped shape is part of their charm.
  5. Bake: Place the baking sheet in the preheated oven and bake for 18 minutes. Watch for the tops to develop a very light golden brown color. If you prefer softer, moister biscuits, you may opt to remove them a bit earlier.
  6. Cool and Serve: Allow the biscuits to cool slightly on a wire rack or the baking sheet. Serve warm, optionally sliced in half and topped with butter, honey, or jelly. Enjoy fresh out of the oven for best texture and flavor.

Notes

  • The dough is sticky and should be dropped, not rolled or kneaded.
  • Feel free to use any type of flour, but all-purpose will give the most classic biscuit texture.
  • Watch the baking time closely to prevent overbaking; biscuits can become dry if left too long in the oven.
  • These biscuits are best enjoyed warm but can be reheated gently.
  • Adding herbs or cheese can customize the flavor if desired.
