Delicious Greek Turkey Burgers infused with fresh spinach, zucchini, feta cheese, and herbs, grilled to perfection and served with classic Greek toppings on toasted buns for a healthy and flavorful meal.

Ingredients

Main Ingredients

  • 1 pound ground turkey
  • 1/2 cup fresh spinach leaves, finely chopped
  • 1/2 cup shredded zucchini, excess moisture squeezed out
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes

For Cooking and Serving

  • Olive oil or avocado oil, for grilling
  • 4 hamburger buns, toasted
  • Tzatziki sauce
  • Lettuce
  • Tomato slices
  • Red onion slices

Instructions

  1. Mix Ingredients: In a large bowl, combine ground turkey, chopped spinach, shredded zucchini (with excess moisture squeezed out), crumbled feta, minced red onion, parsley, lemon zest, garlic powder, oregano, kosher salt, black pepper, and crushed red pepper flakes. Mix thoroughly with your hands until all ingredients are well incorporated.
  2. Form Patties: Shape the mixture into four evenly sized patties, about 1/2-inch thick each, ensuring they hold together well to prevent crumbling during cooking.
  3. Preheat Grill: Preheat your grill or grill pan to medium heat. Brush the grill surface lightly with olive or avocado oil to prevent sticking and enhance browning.
  4. Grill Burgers: Place the patties on the grill and cook for about 5 to 6 minutes per side, flipping carefully. Cook until the internal temperature reaches 165° F, ensuring the turkey is fully cooked and safe to eat.
  5. Assemble Burgers: Remove the cooked patties from the grill and place them on toasted hamburger buns. Top each with a generous spoonful of tzatziki sauce, lettuce, tomato slices, and red onion slices. Serve the burgers immediately while warm.

Notes

  • Ensure to squeeze out excess moisture from the shredded zucchini to prevent the patties from being too wet.
  • Use a meat thermometer to check the internal temperature for safety and best results.
  • These burgers can also be cooked on a stovetop grill pan if a grill is not available.
  • For a lower-fat option, consider using whole wheat buns or serving the patties over a bed of greens without the bun.
  • Tzatziki sauce can be homemade or store-bought based on convenience.
