Ingredients

For the Gluten-Free Crust

  • 1 cup gluten-free all-purpose flour (or regular all-purpose flour)
  • 1.5 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 cup plain Greek yogurt

For the Topping

  • 2/3 cup pizza sauce (or more if needed)
  • 3/4 cup shredded mozzarella cheese

Instructions

  1. Preheat Oven and Prepare Baking Surface: Preheat your oven to 400 degrees Fahrenheit and position a rack in the center. Lightly spray a pizza pan or baking sheet with olive oil spray or non-stick cooking spray, and set it aside to prevent sticking.
  2. Mix Dry Ingredients: In a medium mixing bowl, combine the gluten-free flour, baking powder, kosher salt, garlic powder, and Italian seasoning to create a self-rising flour mixture for the crust.
  3. Incorporate Greek Yogurt: Add the plain Greek yogurt to the dry ingredients. Use a fork or rubber spatula to mix initially, then knead the dough with your hands for 2 to 3 minutes until it forms a smooth dough ball. If sticky, dust the dough and your hands lightly with flour to make handling easier.
  4. Shape the Pizza Crust: Transfer the dough to the greased pizza pan or baking sheet. Use your hands to press the dough evenly into a pizza shape, starting from the center and pushing toward the edges to fit the pan.
  5. Pre-Bake the Crust: Place the shaped dough in the preheated oven and bake for 5 minutes. This pre-baking helps set the crust before adding toppings.
  6. Add Sauce and Cheese: Remove the partially baked crust from the oven. Spread pizza sauce evenly over the surface, leaving about a 3/4 inch border around the edges. Then sprinkle the shredded mozzarella cheese evenly over the sauce.
  7. Finish Baking: Return the pizza to the oven and bake for an additional 15 to 17 minutes, or until the crust is golden brown and the cheese is fully melted and bubbly.
  8. Cool, Slice, and Serve: Let the pizza cool on a rack for about 5 minutes to allow the crust to set further. Slice into four servings and enjoy warm.

Notes

  • You can substitute regular all-purpose flour if gluten is not a concern.
  • Adjust the amount of pizza sauce to your liking for a saucier or lighter topping.
  • If the dough is too sticky, add a little extra flour a tablespoon at a time while kneading.
  • Using plain Greek yogurt adds protein and moisture to the crust.
  • Letting the pizza rest after baking helps prevent the crust from becoming soggy.
