These Gingerbread Waffles are a delightful holiday breakfast treat bursting with warm spices like ginger, cinnamon, and cloves, combined with sweet molasses and freshly grated ginger. Light, crispy, and perfectly balanced in sweetness, they are easy to prepare and make a festive morning meal.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp. baking soda
  • 1 ½ tsp. baking powder
  • ½ tsp. salt
  • 2 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • ⅛ tsp. ground cloves

Wet Ingredients

  • ½ cup unsalted butter, melted
  • 1 cup whole milk, at room temperature
  • 2 large eggs, at room temperature
  • ¼ cup molasses
  • 1 tsp. freshly grated ginger
  • 1 tsp. vanilla extract

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, ground ginger, cinnamon, and cloves until fully combined. Set aside.
  2. Combine Wet Ingredients: In a separate large measuring cup or bowl, whisk the melted butter, whole milk, eggs, molasses, freshly grated ginger, and vanilla extract until the mixture is smooth and uniform.
  3. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients. Whisk thoroughly until the batter is smooth with no lumps.
  4. Rest the Batter: Allow the batter to rest for 10 minutes. This helps the mixture thicken slightly and improves waffle texture. Meanwhile, preheat your waffle iron on high heat.
  5. Cook the Waffles: Lightly spray the preheated waffle iron with baking spray. Use a large portion scoop to fill the waffle iron with batter. Cook the waffles for about 5 minutes or until they are deeply browned and crispy.
  6. Keep Warm: Place the cooked waffles on a cooling rack set over a baking tray inside a warm oven to keep them crisp and warm while cooking the remaining waffles.
  7. Serve: Serve the waffles warm with syrup and freshly whipped cream, if desired, for a festive breakfast experience.

Notes

  • Leftover waffles can be stored in the fridge for up to four days.
  • Waffles freeze well when placed in a freezer-safe bag and can be frozen for up to three months.
  • Reheat frozen waffles in a toaster or oven for best texture.
  • To enhance crispiness, avoid stacking waffles while warm.
