This creamy and flavorful Garlic Dip features roasted garlic blended into rich unsalted butter with olive oil, paprika, fresh thyme, and parsley. Perfect as a spread for bread, a topping for grilled meats or vegetables, or served as a luscious appetizer at any gathering.

Ingredients

Roasted Garlic

  • 2 heads of garlic, peeled cloves
  • 100 ml olive oil
  • Fresh or dried thyme, a few sprigs

Butter Mixture

  • 250 g unsalted butter (100% natural)
  • 2 tsp paprika (or smoked paprika)
  • A pinch of salt (to taste)
  • Fresh parsley, finely chopped (about 2 tbsp)

Instructions

  1. Preheat Oven: Preheat your oven to 160°C (320°F) to prepare for roasting the garlic slowly and evenly.
  2. Prepare Garlic for Roasting: Peel all the garlic cloves and place them in a small oven-safe dish. Pour the olive oil over the garlic, then add a few sprigs of fresh or dried thyme to infuse flavor as the garlic roasts.
  3. Roast Garlic: Bake the garlic mixture for 30 to 40 minutes until the garlic cloves are very soft, fragrant, and caramelized. Once done, remove from oven and allow to cool slightly to handle safely.
  4. Combine Butter and Roasted Garlic: In a mixing bowl, add the unsalted butter. Scoop the softened roasted garlic cloves into the butter, mashing them with a fork while mixing to create a smooth, combined paste.
  5. Add Seasonings: Stir in the paprika, a pinch of salt to taste, and the finely chopped fresh parsley. Whip or stir the mixture thoroughly until the dip is creamy and well incorporated.
  6. Serve: Transfer the garlic butter dip into a serving dish. It can be served immediately or chilled slightly to firm up before serving with bread, vegetables, or grilled dishes.

Notes

  • For a smokier flavor, use smoked paprika instead of regular paprika.
  • The dip can be stored covered in the refrigerator for up to 5 days.
  • Allow the dip to come to room temperature before serving for the best spreadable consistency.
  • If fresh parsley is unavailable, dried parsley can be used but use less as it is more concentrated.
  • This dip pairs wonderfully with crusty bread, crackers, grilled meats, or roasted vegetables.
