Garlic Butter Steak Bites are tender, juicy cubes of sirloin steak seared to perfection and coated in a fragrant garlic butter sauce with rosemary and fresh parsley. This quick and flavorful recipe is perfect for a weekday dinner or a special occasion and takes just 20 minutes from start to finish.

Ingredients

Steak

  • 1 ½ pounds sirloin steak (rib eye or strip steak can be used)
  • ½ teaspoon kosher salt (more if desired)
  • ½ teaspoon coarse ground black pepper (more if desired)
  • 1 tablespoon olive oil

Garlic Butter Sauce

  • 4 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 1 teaspoon dried crushed rosemary (or fresh rosemary)
  • 2 tablespoons minced fresh parsley

Instructions

  1. Prep Steak: Cut the steak into bite-sized cubes, about ¾ inches, ensuring uniform size for even cooking. Season the cubes evenly with kosher salt and coarse ground black pepper.
  2. Heat Pan: Place a large heavy-bottomed skillet over medium-high heat. Allow it to get hot before cooking. Add the olive oil and swirl the pan to coat the bottom evenly with oil for a good sear.
  3. Sear: Add the steak bites in an even single layer to the hot skillet, making sure not to overcrowd the pan. Cook them undisturbed for 3 minutes to get a nice crust. Then stir and continue to cook for another 3 to 4 minutes, stirring occasionally, until the steak bites reach your desired doneness. For medium-rare, aim for an internal temperature of 130 to 135°F where the outside is browned but the inside is slightly pink.
  4. Transfer Steak: Remove the steak bites from the pan and place them on a plate. Tent the plate loosely with foil to keep the steak warm while you prepare the sauce. The steak will continue to cook slightly from residual heat.
  5. Heat Garlic Butter: Return the skillet to the stove and reduce the heat to medium-low. Add the unsalted butter, minced garlic, and dried or fresh rosemary. Heat gently until the butter melts and the garlic becomes fragrant, about 1 to 2 minutes. Be careful not to burn the garlic.
  6. Season and Serve: Turn off the heat and return the steak bites to the skillet. Toss them in the warm garlic butter mixture to coat evenly. Taste and add extra salt and pepper if needed. Sprinkle with freshly minced parsley for a fresh finish. Serve immediately while hot and flavorful.

Notes

  • For best results, use a heavy-bottomed skillet like cast iron for even heat distribution and a great sear.
  • Do not overcrowd the pan when searing the steak bites to avoid steaming instead of searing.
  • Use a meat thermometer to check internal temperature for precise doneness.
  • Fresh rosemary can be substituted for dried; use 1 tablespoon fresh if available.
  • Serve with crusty bread or over mashed potatoes to soak up the garlic butter sauce.
