Garlic Butter Steak Bites and Potatoes is a quick and flavorful one-pan meal featuring tender sirloin steak cubes seared to perfection and golden, garlicky Yukon gold potatoes. Cooked in a cast iron skillet with a fragrant blend of garlic, dried herbs, and ghee, this dish is perfect for a hearty weeknight dinner or an impressive weekend treat.

Ingredients

For the Steak and Potatoes

  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes
  • Freshly chopped parsley, for garnish

Instructions

  1. Prep: Cut the Yukon gold potatoes and sirloin steak into ½ inch cubes. Mince the garlic and set aside all ingredients for easy access during cooking.
  2. Heat the skillet: Place a large cast iron skillet over medium heat and add the olive oil along with two tablespoons of ghee, allowing the ghee to melt fully.
  3. Cook the potatoes: Add the cubed potatoes to the skillet and immediately sprinkle with minced garlic, dried thyme, dried oregano, sea salt, and black pepper. Cook the potatoes for 2-3 minutes undisturbed before stirring. Continue to cook, stirring every 1-2 minutes, until the potatoes are golden brown and fork tender, about 8-10 minutes. Avoid overcrowding the pan to ensure even cooking. Once done, remove the potatoes and browned bits from the skillet and set aside.
  4. Sear the steak: Increase the heat to medium-high and add the remaining two tablespoons of ghee to the pan. Once melted, add the steak cubes and season them with a dash of salt and pepper. Cook the steak without stirring for at least 2 minutes to develop a good sear. Then stir and continue cooking until all sides are golden brown, another 1-2 minutes.
  5. Combine and finish: Return the cooked potatoes to the skillet with the steak. Stir everything together to combine and heat through. Adjust seasoning with additional salt and pepper if needed. Garnish with freshly chopped parsley before serving.

Notes

  • Use a large cast iron skillet for best heat retention and even searing.
  • Do not overcrowd the pan when cooking potatoes or steak to ensure proper browning.
  • Yukon gold potatoes are ideal for their creamy texture and ability to crisp up nicely.
  • You can substitute ghee with butter but be mindful of potential burning due to butter’s lower smoke point.
  • Serve immediately for best flavor and texture.
