Ingredients

Salmon and Coating

  • 4 boneless skinless Salmon Fillets
  • 40g / 1/4 cup Plain Flour
  • 1 tsp Garlic Powder
  • 1 tsp Salt (plus more to taste)
  • 1/2 tsp Black Pepper (plus more to taste)

Cooking and Sauce

  • 1/2 tbsp Olive Oil
  • 6 tbsp / 90g / 3.2oz Unsalted Butter (divided into tbsp chunks)
  • 2 cloves Garlic (finely diced)
  • 120ml / 1/2 cup Vegetable Stock
  • 1 tbsp Fresh Parsley (finely diced)
  • 1 Lemon (divided into 4 wedges, for serving)

Instructions

  1. Prepare the Salmon: In a large shallow dish, combine the flour, garlic powder, salt, and black pepper. Lightly coat each salmon fillet in the seasoned flour mixture, shaking off any excess. Set aside to ensure an even crust forms during cooking.
  2. Pan-Fry the Salmon: Heat the olive oil in a large non-stick pan over medium-high heat until hot. Place the salmon fillets in the pan and fry for about 3 minutes until the bottom develops a golden crust. Carefully flip them and cook for another 2 minutes until the other side is golden. Add 1 tablespoon of butter to the pan and baste the fillets by spooning the melted butter over them for about a minute, until they are just cooked through. Remove the salmon from the pan and reduce the heat to medium.
  3. Make the Garlic Butter Sauce: Add the finely diced garlic to the pan and fry briefly until it just starts to turn golden, taking care not to burn it, which would create bitterness. Pour in the vegetable stock, scraping the pan bottom to release all the flavorful browned bits. Add the remaining butter chunks and whisk continuously until the butter melts and the sauce turns cloudy and well combined. Stir in the finely diced parsley, and season with a pinch of salt and pepper to taste.
  4. Simmer and Finish: Allow the sauce to simmer gently, stirring occasionally, until it starts to thicken slightly. Lower the heat to low, return the salmon fillets to the pan, and baste them in the sauce to warm them through and coat them in the rich garlic butter sauce. Serve immediately with a generous spoonful of sauce and a wedge of lemon to squeeze over the top. Note that the sauce will thicken further as you baste the salmon.

Notes

  • Use unsalted butter to better control the saltiness of the dish.
  • Ensure not to burn the garlic when frying as it can taste bitter and affect the sauce.
  • For best results, use fresh parsley and freshly squeezed lemon juice at serving time.
  • Adjust seasoning to taste after making the sauce, especially if using salted butter or stock.
  • Serve immediately to enjoy the crispy crust and silky butter sauce at their best.
