This French Grated Carrot Salad with Lemon Dijon Vinaigrette features shredded carrots tossed in a light, citrusy dressing made from lemon juice, Dijon mustard, and honey. Crisp and refreshing, this salad is a perfect quick and healthy side dish that can be prepared in just 15 minutes.

Ingredients

Salad

  • 1 pound carrots, peeled

Vinaigrette

  • 2 teaspoons Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice (from one lemon)
  • 1½ tablespoons vegetable oil
  • 1½ tablespoons extra virgin olive oil
  • 1 to 2 teaspoons honey, to taste
  • Heaping ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper, to taste

Garnish

  • 2 tablespoons chopped fresh parsley
  • 2 finely sliced scallions (or 1 tablespoon finely chopped shallots)

Instructions

  1. Shred the Carrots: Using a food processor, shred the peeled carrots into fine pieces. Set the shredded carrots aside for mixing with the dressing.
  2. Make the Vinaigrette: In a salad bowl, combine the Dijon mustard, freshly squeezed lemon juice, honey, vegetable oil, extra virgin olive oil, salt, and freshly ground black pepper. Whisk these ingredients together until they emulsify into a smooth dressing.
  3. Toss the Salad: Add the shredded carrots, chopped fresh parsley, and finely sliced scallions (or shallots) to the bowl with the vinaigrette. Toss everything together thoroughly ensuring that the carrots are evenly coated with the dressing.
  4. Adjust Seasoning and Chill: Taste the salad and adjust the seasoning with more honey, salt, or pepper if needed. Cover the bowl and refrigerate the salad until ready to serve to allow the flavors to meld and the salad to chill.

Notes

  • The amount of honey can be adjusted to balance the natural sweetness of the carrots according to your taste.
  • If preparing the salad ahead of time, check and adjust the seasoning again before serving since the flavors may mellow after refrigeration.
