A nutritious and warming flaxseed porridge made with plant-based milk, ground flaxseeds, and a hint of cinnamon. Topped with fresh blueberries, toasted almonds, and creamy yogurt, this quick and wholesome breakfast is perfect for a healthy start to your day.

Ingredients

Base Ingredients

  • 2 tbsp Ground Flaxseeds
  • 200 mL Plant Milk (Soy or Almond)
  • 1 pinch Ground Cinnamon

Toppings

  • 80 g Blueberries
  • 1 tbsp Toasted Almonds
  • 120 g Yoghurt (Soy or Coconut)

Instructions

  1. Combine ingredients: In a medium saucepan, mix the ground flaxseeds with the plant milk and add a pinch of ground cinnamon. Stir gently to combine the ingredients evenly.
  2. Cook the porridge: Place the saucepan over medium-low heat and bring the mixture to a gentle boil. Simmer for about 5 minutes, stirring continuously until the porridge thickens to your desired consistency.
  3. Rest and thicken: Remove the saucepan from heat and allow the porridge to stand for 2 minutes. This lets it cool slightly and thicken further before serving.
  4. Serve with toppings: Spoon the warm flaxseed porridge into a bowl and top with fresh blueberries, toasted almonds, and a dollop of soy or coconut yogurt for added creaminess and flavor.

Notes

  • Use plant-based milk such as soy or almond for a dairy-free option.
  • Toast the almonds lightly in a dry pan beforehand to enhance their flavor and crunch.
  • Feel free to substitute blueberries with any fresh berries or chopped fruits of your choice.
  • You can adjust the thickness of the porridge by cooking it a little longer or shortening the simmering time.
