Fatteh is a traditional Lebanese bread salad featuring toasted pita bread, creamy garlic yogurt sauce, warm chickpeas, and toasted pine nuts. This quick and easy recipe balances crunchy textures with rich, tangy flavors, making it a delightful appetizer or light meal.

Ingredients

Bread and Nuts

  • 2 pita breads
  • 3 tablespoons pine nuts
  • 1 teaspoon extra virgin olive oil, plus more for garnish

Yogurt Sauce

  • 2 cloves garlic
  • 1/2 teaspoon salt, divided
  • 1 cup yogurt
  • 1 tablespoon tahini

Chickpeas

  • 1 (15 oz) can chickpeas

Instructions

  1. Toast the Pita Bread: Preheat the oven to 400°F (200°C). Place the pita breads directly onto the oven grate and bake for 10-13 minutes, flipping halfway through. The pita will crisp up as it cools even if still pliable in the center when removed. Once cool, break into bite-sized pieces.
  2. Prepare Garlic Yogurt Sauce: Mince the garlic very finely. Sprinkle on 1/4 teaspoon salt and mash into a paste using the side of the knife. In a small bowl, mix the garlic paste with yogurt, tahini, and the remaining salt. Stir well and refrigerate until serving.
  3. Warm the Chickpeas: Place chickpeas with their liquid in a small pot, add water to cover by 1 inch, and bring to a gentle simmer. Cook for 3-5 minutes until warmed through. Keep them warm by leaving them in the pot off heat. Drain before serving.
  4. Toast the Pine Nuts: Heat a skillet over medium heat. Add olive oil and pine nuts, stirring frequently to ensure even browning. Toast until the pine nuts are golden brown on most sides, taking care not to burn them.
  5. Assemble and Serve: Spoon the warmed chickpeas into a serving bowl. Add a generous dollop of the garlic yogurt sauce, then the crispy pita pieces. Top with toasted pine nuts, chopped parsley, and a drizzle of olive oil. Serve immediately and enjoy the layers of texture and flavor.

Notes

  • Toasted pita can be stored in an airtight container for a day but is best fresh for maximum crunch.
  • Use full-fat yogurt for a richer taste and smoother sauce texture.
  • Chickpeas can be rinsed and drained before warming if preferred to reduce sodium.
  • Watch pine nuts carefully while toasting, as they burn easily and quickly.
  • This dish can be served warm or at room temperature according to preference.
