This Egg Roll in a Bowl recipe is a quick and flavorful skillet dish that captures the taste of a classic egg roll without the wrapper. Ground turkey is cooked with aromatic garlic, ginger, and vegetables like cabbage and carrots, all tossed together with soy sauce, rice vinegar, and toasted sesame oil for an easy, low-carb, and satisfying meal served over steamed white rice.

Ingredients

Meat and Aromatics

  • 2 tablespoons olive oil (divided)
  • 1 pound ground turkey
  • 1 small sweet onion, finely diced
  • 3 garlic cloves, finely minced
  • 1 teaspoon fresh ginger, finely minced

Vegetables

  • 1 cup shredded carrots
  • 1 small head cabbage (about 8 cups shredded)

Liquids and Seasonings

  • ¼ cup chicken broth
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil

To Serve

  • Cooked white rice
  • Green onions (green parts only, thinly sliced)
  • Toasted sesame seeds
  • Sriracha mayo (optional)

Instructions

  1. Cook the Turkey: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it up, until it is almost cooked through, about 5-6 minutes.
  2. Sauté Onion and Aromatics: Push the turkey to one side of the pan and add the remaining tablespoon of olive oil. Add the finely diced sweet onion and cook for 3-4 minutes, stirring occasionally until softened. Then add the shredded carrots, garlic, and minced ginger, cooking for an additional 2 minutes with frequent stirring to develop their flavors.
  3. Add Broth and Deglaze: Pour in the chicken broth and use a spatula to scrape any browned bits off the bottom of the pan; this adds extra flavor.
  4. Cook Cabbage Mixture: Add the shredded cabbage, soy sauce or tamari, rice vinegar, salt, and black pepper to the skillet. Stir everything together well, then cover the pan. Reduce the heat to medium-low and cook for 12-15 minutes, or until the cabbage is tender to your liking.
  5. Finish with Sesame Oil: Remove the skillet from the heat and stir in the toasted sesame oil to add a fragrant nutty flavor.
  6. Serve: Spoon the egg roll mixture into bowls over cooked white rice if desired. Garnish with thinly sliced green onions, toasted sesame seeds, and a drizzle of sriracha mayo for a spicy kick, if preferred.

Notes

  • For a lower-carb version, serve without the white rice.
  • You can substitute ground pork or beef for ground turkey if preferred.
  • Adjust the cooking time of the cabbage depending on how crunchy or soft you like it.
  • To make this dish vegan, replace turkey with firm tofu and use vegetable broth instead of chicken broth.
  • Sriracha mayo is optional but adds a nice spicy creaminess to the dish.
