This easy yellow dal recipe is a comforting and flavorful Indian-inspired dish made with yellow lentils, fresh ginger, turmeric, coriander, and cumin. Perfectly spiced yet mild, it makes a nutritious and satisfying dinner that the whole family will enjoy. Serve it over rice for a complete meal.

Ingredients

Main Ingredients

  • 3 Tablespoons vegetable oil
  • 1 medium yellow onion, diced
  • 9 garlic cloves, minced
  • 1 Tablespoon grated fresh ginger
  • ½ Tablespoon coriander powder
  • ½ Tablespoon cumin powder
  • 2 teaspoons turmeric powder
  • 1 ½ cups yellow lentils (moong dal or toor dal)
  • 4 cups vegetable broth

Optional

  • Cooked rice, for serving
  • Cilantro leaves for garnish

Instructions

  1. Heat the Oil and Sauté Onions: In a large pan over medium-high heat, heat the vegetable oil. Add the diced onions and sauté until they become tender and translucent, about 5-7 minutes.
  2. Add Garlic, Ginger, and Spices: Stir in the minced garlic, grated fresh ginger, coriander, cumin, and turmeric powders. Cook for about 30 seconds, stirring constantly to release the spices' aroma without burning them.
  3. Add Lentils and Broth: Pour in the yellow lentils and vegetable broth. Stir well to combine all ingredients.
  4. Simmer the Dal: Cover the pan and reduce heat to medium-low. Let the lentils cook until soft and fully tender, approximately 30 minutes. Stir occasionally to prevent sticking and ensure even cooking.
  5. Serve: Once cooked, serve the dal hot over cooked rice if desired. Garnish with fresh cilantro leaves for added flavor and presentation.

Notes

  • If the dal becomes too thick while cooking, add a little extra vegetable broth or water to reach desired consistency.
  • For a richer taste, you can add a splash of coconut milk towards the end of cooking.
  • Adjust the garlic and ginger quantities to suit your taste preference.
  • This dal freezes well; store leftovers in an airtight container and reheat gently with a splash of water.
  • Use freshly ground spices for the best flavor.
