These Easy Spinach Quesadillas are a quick and delicious way to enjoy a cheesy, flavorful snack or light meal. Packed with nutritious spinach and a blend of cheeses, seasoned with cumin and chili powder, they're perfect for a 20-minute prep and cook time. Crispy on the outside and melty on the inside, these quesadillas are great for a crowd or a healthy weekday treat.

Ingredients

Spinach Mixture

  • 4 cups baby spinach (loosely packed when measuring)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons cream cheese
  • 1/4 teaspoon salt (optional)
  • 1/4 teaspoon cumin
  • 1/8 teaspoon chili powder

Quesadillas

  • 12 small tortillas (corn or flour)

Instructions

  1. Wilt the spinach: Place the spinach into a heat-safe bowl and cook in the microwave for 30-60 seconds or until wilted. Let cool slightly. Press between a clean kitchen towel or paper towel briefly to absorb any excess moisture to avoid soggy quesadillas.
  2. Prepare the spinach filling: Place the wilted spinach, shredded cheddar cheese, cream cheese, salt, cumin, and chili powder into a food processor. Blend until smooth, stopping to scrape down the sides as needed to ensure an even mixture.
  3. Assemble the quesadillas: Spread the spinach and cheese mixture evenly onto 6 tortillas. Top each with another tortilla to form a sandwich.
  4. Cook the quesadillas: Warm a skillet over medium heat. Once heated, cook each quesadilla for 2-3 minutes per side or until golden brown and the cheese filling is melty and warm.
  5. Serve: Remove from skillet, cut each quesadilla into wedges, and serve warm for the best taste and texture.

Notes

  • You can use either corn or flour tortillas depending on preference.
  • Adjust seasoning to taste; add more chili powder if you like it spicier.
  • Be sure to press out excess water from the spinach to keep quesadillas from becoming soggy.
  • Cooking time may vary slightly depending on your skillet and stove heat.
  • Serve with salsa, sour cream, or guacamole for added flavor.
