Ingredients

Protein and Vegetables

  • 1 lb ground beef or ground turkey
  • 1 jalapeno, diced (optional)

Other Ingredients

  • 1 (15 oz) can tomatoes with green chiles
  • 1 packet taco seasoning (plus required water as per packet instructions)
  • 1 (16 oz) package potato gnocchi
  • 1 ½ cups Mexican style shredded cheese (more or less to your liking)

Instructions

  1. Cook the Meat and Jalapeno: Heat your skillet over medium heat and add the ground beef and diced jalapeno. Cook until the meat is browned and cooked through, then drain any excess grease from the skillet.
  2. Cook the Gnocchi: While the meat cooks, bring a pot of water to a boil. Add the potato gnocchi and cook for 2-3 minutes until they float to the surface, indicating they are done. Optional: After draining, sauté the gnocchi briefly in olive oil to add a crispy texture.
  3. Add Tomatoes and Seasoning: To the cooked meat mixture, add the canned tomatoes with green chiles, the taco seasoning packet, and the amount of water specified on the seasoning packet. Stir to combine.
  4. Simmer to Thicken: Let the mixture cook for about 2 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Combine Gnocchi and Meat Sauce: Add the cooked gnocchi to the skillet and stir until everything is well combined.
  6. Add Cheese and Melt: Sprinkle the shredded Mexican cheese over the top. Place the skillet under the broiler in the oven until the cheese melts and bubbles to your desired doneness, or alternatively, cover the skillet on the stove over low heat until the cheese melts.
  7. Serve: Serve the taco gnocchi hot with optional toppings such as sour cream, hot sauce, cilantro, and salsa for added flavor.

Notes

  • You can substitute ground turkey for beef for a leaner option.
  • Cooking gnocchi in boiling water only takes a few minutes; they’re done once they float.
  • Broiling the skillet cheese topping adds a nice golden crust, but melting on the stove is a convenient alternative.
  • Adjust the jalapeno amount or omit for less heat based on your preference.
  • Feel free to add additional toppings like sliced avocado, chopped onions, or lime wedges.
