This Easy Skillet Plum Cobbler is a delightful and comforting dessert featuring juicy fresh plums covered with a sweet, buttery biscuit topping baked to golden perfection. Perfect for a quick fruit dessert that’s bursting with flavor and pairs wonderfully with vanilla ice cream or whipped cream.

Ingredients

Filling

  • 6 cups fresh plums, pitted and sliced
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla flavoring
  • 1 tablespoon cornstarch

Topping

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup whole milk
  • 1/2 teaspoon vanilla flavoring

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare it for baking the cobbler.
  2. Prepare the filling: In a large bowl, combine the sliced plums, 3/4 cup granulated sugar, lemon juice, 1 teaspoon vanilla flavoring, and cornstarch. Mix well until the plums are evenly coated. Set aside to allow the flavors to meld.
  3. Prepare the topping: In a separate bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt. Add the melted butter, whole milk, and 1/2 teaspoon vanilla flavoring. Stir just until combined; the batter will be thick and slightly lumpy.
  4. Assemble the cobbler: Pour the plum mixture into a 9-inch cast iron skillet or baking dish, spreading it out evenly. Dollop spoonfuls of the batter over the plums, spreading gently to cover most of the fruit but leaving some visible for a rustic look.
  5. Bake: Place the skillet in the preheated oven and bake for 35-40 minutes until the topping is golden brown and the plum filling is bubbling around the edges.
  6. Cool and serve: Allow the cobbler to cool for at least 15 minutes to set before serving. Enjoy warm, optionally topped with vanilla ice cream or whipped cream for an extra indulgence.

Notes

  • Using fresh, ripe plums will yield the best flavor and juiciness for the cobbler.
  • Allowing the cobbler to cool slightly before serving prevents the filling from being too runny and helps the topping set.
  • For a dairy-free version, substitute the milk and butter with plant-based alternatives.
  • You can add a pinch of cinnamon or nutmeg to the topping or filling for additional warmth and spice.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated gently before serving.
