This classic Catalan Romesco sauce is smoky, nutty, and bursting with Spanish flavors. Made from fire-roasted tomatoes, roasted red peppers, almonds, pine nuts, garlic, olive oil, and smoky paprika, it’s a versatile sauce that enhances grilled vegetables, seafood, meats, or toasted bread with its rich texture and vibrant taste.

Ingredients

Vegetables & Nuts

  • 1 (14-ounce) can fire-roasted tomatoes, drained
  • 1 (12-ounce) jar roasted red peppers, drained
  • ¾ cup blanched almonds
  • ¼ cup pine nuts
  • ¼ cup fresh flat-leaf parsley leaves

Liquids & Seasonings

  • ¼ cup extra-virgin olive oil
  • 3 garlic cloves, smashed
  • 2 tablespoons sherry vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon fine sea salt

Instructions

  1. Prepare Ingredients: Drain the canned fire-roasted tomatoes and roasted red peppers to reduce excess liquid, ensuring the sauce won't be too watery and will have a rich, concentrated flavor.
  2. Combine in Blender: In a blender or food processor, add the drained tomatoes, red peppers, blanched almonds, pine nuts, fresh parsley, extra-virgin olive oil, smashed garlic cloves, sherry vinegar, smoked paprika, and sea salt.
  3. Blend to Desired Consistency: Process the mixture for about 1 minute or until you reach your preferred texture, whether slightly chunky or completely smooth.
  4. Store Properly: Transfer the romesco sauce into an airtight container and refrigerate. The sauce will keep well for up to 2 weeks.

Notes

  • Pine nuts can be substituted with additional almonds or walnuts if unavailable.
  • Use fire-roasted tomatoes and roasted red peppers for the authentic smoky flavor; if unavailable, lightly roast fresh tomatoes and peppers before using.
  • Adjust the consistency by adding a little water or olive oil if the sauce is too thick.
