These Easy Protein Donuts are a delightful and healthier twist on traditional donuts, featuring gluten-free flour and a boost of vanilla protein powder. With a naturally sweetened batter and optional chocolate or vanilla glazes, these baked donuts offer a soft, tender texture and a guilt-free indulgence perfect for breakfast or a snack.

Ingredients

Dry Ingredients

  • 2/3 cup gluten free 1 to 1 baking flour (or regular all purpose flour)
  • 1/4 cup vanilla protein powder
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt

Wet Ingredients

  • 1/4 cup pure maple syrup
  • 3 tablespoons olive oil
  • 1/4 cup unsweetened almond milk
  • 1 egg
  • 1 teaspoon vanilla bean paste

Chocolate Glaze

  • 5 tablespoons cocoa powder
  • 2 heaping tablespoons honey
  • 1 1/2 tablespoons coconut oil, melted
  • 1 tablespoon unsweetened almond milk

Vanilla Glaze

  • 2/3 cup organic powdered sugar
  • 1-2 tablespoons unsweetened almond milk

Instructions

  1. Preheat and Prepare: Preheat your oven to 325°F (163°C) and lightly grease your donut pan with olive oil to prevent sticking.
  2. Mix Dry Ingredients: In a mixing bowl, combine the gluten-free flour, vanilla protein powder, baking powder, and salt. Whisk them together thoroughly to ensure even distribution.
  3. Add Wet Ingredients: Add the maple syrup, olive oil, almond milk, egg, and vanilla bean paste to the dry ingredients. Stir gently until the batter is smooth and free of lumps, being careful not to over-mix which could toughen the donuts.
  4. Fill Donut Pan: Transfer the batter into a piping bag or a large ziplock bag with the corner cut off. Pipe the batter into the donut cavities, filling each about two-thirds full. Alternatively, spoon the batter in, though piping will give neater, rounder edges.
  5. Bake: Place the donut pan in the oven and bake for 10 minutes until the donuts are set and a toothpick inserted comes out clean. Once done, remove from oven and allow to cool.
  6. Glaze Preparation: For the chocolate glaze, whisk cocoa powder, honey, melted coconut oil, and almond milk together in a shallow bowl until smooth. For the vanilla glaze, whisk together powdered sugar and 1-2 tablespoons almond milk until smooth.
  7. Glaze and Decorate: Dip cooled donuts into the chosen glaze. Repeat for all donuts. Optionally, decorate with sprinkles or other toppings as desired.
  8. Serve: Allow the glaze to set briefly, then serve your protein-packed baked donuts fresh for a nutritious and delicious treat.

Notes

  • Use a piping bag for neater donut shapes with round edges.
  • Be careful not to overmix the batter to keep donuts light and tender.
  • You can substitute regular all-purpose flour if gluten-free is not required.
  • Adjust almond milk quantity in the glaze to reach desired consistency.
  • Store donuts in an airtight container at room temperature for up to 2 days or refrigerate for longer freshness.
  • Protein powder brand and flavor affect taste; vanilla protein powder is recommended for best results.
