This Easy Lavender No-Bake Cheesecake combines a creamy, subtly floral lavender-infused filling with a buttery graham cracker crust. Perfect for spring or summer gatherings, this dessert requires no baking and sets beautifully in the refrigerator, delivering a delicate purple hue and an elegant twist on a classic cheesecake.

Ingredients

Crust

  • 1 ½ cups crushed graham crackers (vanilla wafers, Golden Oreos, or other mild-flavored cookie)
  • ½ cup butter, melted

Filling

  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup powdered sugar
  • ½ cup heavy cream
  • 1 tablespoon lavender syrup
  • 3 to 5 drops purple food coloring

Garnish

  • 2 teaspoons dry culinary lavender flowers
  • Whipped cream (optional)

Instructions

  1. Soften the cream cheese: Remove the cream cheese packages from the fridge and let them come to room temperature for about an hour. Alternatively, use the microwave’s soften setting cautiously to avoid melting, which would affect the cheesecake’s texture.
  2. Prepare the crust: Crush the graham crackers or cookies using a food processor or by placing them in a zipper bag and rolling with a pin until finely ground. Combine the crumbs with melted butter, then press firmly into the bottom of an 8-inch springform pan. Chill in the refrigerator for 30 minutes to set.
  3. Bring heavy cream to room temperature: Allow the heavy cream to sit at room temperature for about 15 minutes to enhance its blendability.
  4. Make the filling: Beat the softened cream cheese in a large bowl with an electric mixer on medium speed. Gradually add powdered sugar and half the heavy cream, continuing to beat until smooth. Stir in lavender syrup and purple food coloring drops, and beat on low speed just until color is evenly incorporated. Avoid overbeating to prevent excess air.
  5. Assemble the cheesecake: Pour the lavender cream cheese filling over the chilled crust and spread evenly. Refrigerate for at least 4 hours to allow the cheesecake to set properly.
  6. Garnish and serve: Before serving, decorate with whipped cream if desired and sprinkle culinary lavender flowers generously over the top for a fragrant floral finish.

Notes

  • Use mild-flavored cookies like vanilla wafers or Golden Oreos for the crust to not overpower the lavender flavor.
  • Room temperature ingredients blend better and ensure a smooth, creamy texture.
  • Do not overbeat the filling to prevent it from becoming too airy and not setting well.
  • Lavender syrup can be adjusted to taste; start with one tablespoon and increase for a stronger flavor.
  • The cheesecake must chill for at least 4 hours, but overnight is best for optimal firmness.
  • For a vegan or dairy-free option, substitute cream cheese and heavy cream with plant-based alternatives, keeping in mind texture changes.
