Ingredients

For the Curry Sauce

  • 3 tbsp all-purpose flour (gluten-free or regular)
  • 3 tbsp oriental curry powder (or regular curry powder; medium spicy)
  • 3 tbsp soy sauce or tamari (tamari is gluten-free)
  • 1 tsp garam masala
  • 1 apple (cored and grated)
  • 1/2 tsp ground black pepper
  • 1 cup water

For the Main Dish

  • 1 tbsp avocado oil (or any neutral cooking oil)
  • 1½ lb boneless skinless chicken thighs (cut into bite-sized pieces)
  • 1 large onion (diced)
  • 1 lb potatoes (peeled and cubed)
  • 2 carrots (cut into 1/2 inch pieces)
  • 4 garlic cloves (minced)
  • 2 cups water

Instructions

  1. Prepare the curry sauce: Combine all ingredients for the curry sauce in a bowl. For faster preparation, cut the apple into chunks and blend all the sauce ingredients together until smooth.
  2. Heat the oil: Heat avocado oil in a large pot or Dutch oven over medium-high heat to ensure it's hot enough to sear the chicken.
  3. Brown chicken and onion: Add the bite-sized chicken thighs and diced onion to the pot. Cook, stirring frequently, for 5-6 minutes until the chicken is browned on the outside and onions are softened.
  4. Add vegetables and garlic: Stir in the peeled and cubed potatoes, carrot pieces, and minced garlic. Cook everything together for about 1 minute to meld flavors.
  5. Add water and simmer: Pour in 2 cups of water and bring the mixture to a boil. Once boiling, reduce heat to low, cover the pot, and simmer gently for 10 minutes.
  6. Add curry sauce and simmer: Remove the lid and stir in the prepared curry sauce. Continue simmering the curry uncovered for 15-20 minutes, stirring occasionally, until the sauce thickens and reduces to your desired consistency.
  7. Adjust seasoning: Taste the curry and adjust by adding more soy sauce for saltiness or a bit of honey or sugar if you prefer a sweeter flavor.
  8. Serve: Serve the Japanese chicken curry warm over steamed rice for a complete meal.

Notes

  • You can blend the curry sauce ingredients for a smoother sauce.
  • Adjust curry powder quantity to control spiciness.
  • Tamari sauce is a gluten-free alternative to soy sauce.
  • For a richer flavor, use chicken thighs instead of breast.
  • Serve with steamed rice or Japanese short-grain rice for authenticity.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
