Garnished with fresh herbs and peanuts, this recipe is a comforting and delicious main course perfect for any night.

Ingredients

Main Ingredients

  • 8 oz flat and thick rice noodles
  • 4 cloves garlic, minced
  • 1 small onion, thinly chopped
  • 2-3 tbsp cooking oil

For the Easy Pad Thai Sauce

  • 1 cup coconut milk
  • ⅓ cup peanut butter
  • 3 tbsp soy sauce
  • 4 tbsp tomato ketchup
  • 3 tsp fish sauce
  • 1 tsp red pepper flakes
  • 3-4 dashes hot sauce (adjust to taste)
  • 1 inch piece ginger, minced

For Garnish

  • Chopped onions
  • Chopped cilantro
  • Chopped peanuts

Instructions

  1. Boil Noodles: In a medium pot, bring enough water to a rolling boil to fully submerge the noodles. Add the rice noodles and cook for 3-4 minutes until soft and separated. Drain the noodles immediately and set aside to prevent overcooking.
  2. Prepare Sauce: In a medium bowl, combine coconut milk, peanut butter, soy sauce, tomato ketchup, fish sauce, red pepper flakes, hot sauce, and minced ginger. Whisk thoroughly until the mixture becomes smooth and well blended into a creamy Pad Thai sauce.
  3. Sauté Aromatics: Heat cooking oil in a wok or wide skillet over medium heat. Add minced garlic, minced ginger, and chopped onions. Sauté until the onions are soft and the mixture is fragrant, about 2-3 minutes.
  4. Cook Noodles with Sauce: Pour the prepared sauce into the wok with the sautéed aromatics. Add the cooked rice noodles. Using tongs, toss everything together to evenly coat the noodles in the sauce. The noodles will appear saucy at first but will absorb the sauce quickly.
  5. Finish and Garnish: Turn off the heat. Optionally drizzle with fresh lime juice for brightness. Serve the Pad Thai garnished with chopped cilantro, green onions, and chopped peanuts to add freshness and crunch.

Notes

  • Try the shrimp version of Pad Thai by adding shrimp, egg, and tamarind paste for a more traditional flavor.
  • Adjust the level of spiciness by modifying the amount of red pepper flakes and hot sauce.
  • Use thick rice noodles for the best texture; soak or cook according to package instructions if different from this recipe.
  • This recipe can be made vegetarian by omitting fish sauce or replacing it with soy sauce or tamari.
