This easy garlic chicken pasta recipe combines tender, flavorful chicken breasts with a creamy garlic parmesan sauce and perfectly cooked pasta, making a quick and satisfying meal ready in just 30 minutes.

Ingredients

Pasta

  • 8 ounces uncooked pasta

Chicken and Seasoning

  • 2 chicken breasts (cut in half lengthwise)
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste

Cooking Fats and Sauces

  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)

Sauce Ingredients

  • 3 cloves garlic (minced)
  • 1/2 tablespoon flour
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1 cup heavy/whipping cream
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. Cook Pasta: Boil a salted pot of water and cook the pasta al dente according to the package directions, then drain the pasta, reserving a little pasta water for later use.
  2. Prepare Chicken: Cut the chicken breasts lengthwise into 4 thinner pieces. Season them with garlic powder, salt, and pepper evenly on both sides.
  3. Cook Chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Once hot, cook the chicken pieces for 5-6 minutes on each side until they are golden brown and cooked through (internal temperature 165°F). Remove chicken from skillet and place on a plate.
  4. Make Sauce Base: Add the remaining butter to the same skillet. When melted, stir in minced garlic and flour, cooking for about 30 seconds to cook out the raw flour taste.
  5. Add Liquids: Whisk in the chicken broth and lemon juice, scraping the bottom of the skillet to deglaze and incorporate any browned bits. Let this mixture bubble for around one minute to reduce slightly.
  6. Thicken Sauce: Pour in the heavy cream and cook for 4-5 minutes, stirring occasionally until the sauce thickens to a creamy consistency. Reduce heat if sauce boils vigorously.
  7. Slice Chicken: While the sauce thickens, cut the cooked chicken into bite-size pieces.
  8. Add Cheese: Stir freshly grated parmesan cheese into the cream sauce until melted and combined.
  9. Combine Pasta and Chicken: Add the sliced chicken and drained pasta to the sauce in the skillet. Toss everything until evenly coated. Add a tablespoon of reserved pasta water if the sauce is too thick to loosen it.
  10. Serve: Serve the garlic chicken pasta immediately, seasoning with additional salt and pepper to taste.

Notes

  • Use freshly grated parmesan cheese for the best flavor and smooth melting texture.
  • Reserve some pasta water before draining to adjust the sauce consistency if needed.
  • Make sure chicken is cooked to an internal temperature of 165°F for safety.
  • You can substitute chicken broth with vegetable broth for a lighter flavor.
  • For a lower-fat option, swap heavy cream with half-and-half, but the sauce will be less rich.
