Ingredients

Stir Fry

  • 2 small boneless, skinless chicken breasts (just over 1 lb), cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 2 tablespoons peanut oil (or olive oil), plus more as needed
  • 2 ½ cups mixed stir-fry vegetables
  • 10 oz lo mein noodles

Sauce

  • 1 cup chicken broth
  • ¾ cup beef broth
  • ¼ cup soy sauce
  • 1 tablespoon brown sugar (or honey)
  • 2 tablespoons cornstarch
  • 3 cloves garlic, minced
  • 1 teaspoon hot sauce (Frank’s or sriracha work well)
  • ¼ teaspoon toasted sesame oil
  • ¼ teaspoon ground ginger
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prepare Sauce: In a large measuring cup or bowl, whisk together chicken broth, beef broth, soy sauce, brown sugar, cornstarch, minced garlic, hot sauce, toasted sesame oil, ground ginger, and red pepper flakes until smooth.
  2. Marinate Chicken: Transfer ¼ cup of the sauce to a medium bowl. Pat the chicken dry, season with salt and pepper, then toss it in the reserved sauce. Set aside while prepping vegetables.
  3. Cook Noodles: Bring a pot of salted water to a boil. Cook the lo mein noodles according to package instructions, but drain when they are 1 minute less than al dente. Drain well and set aside.
  4. Sear Chicken: Heat 2 tablespoons of peanut or olive oil in a large skillet or wok over medium-high heat. Add chicken in a single layer and sear undisturbed for 3 minutes. Toss and cook for another 2–3 minutes until golden and cooked through. Remove chicken and set aside.
  5. Stir-Fry Vegetables: In the same skillet, add more oil if needed. Add mixed vegetables and stir-fry for about 3 minutes until slightly tender but still crisp.
  6. Add Sauce and Thicken: Pour the remaining sauce from step 1 into the skillet with vegetables. Stir well and bring to a gentle boil. Reduce heat to low and allow sauce to thicken.
  7. Toss Noodles and Chicken: Add noodles gradually to the skillet, tossing with tongs to coat evenly with sauce. Return the cooked chicken to the skillet and toss everything together. Cook for 1–2 minutes until heated through and well combined.

Notes

  • Use peanut oil for authentic flavor, but olive oil works as a substitute.
  • Adjust hot sauce and red pepper flakes according to desired spice level.
  • Use fresh vegetables or a frozen stir-fry vegetable mix for convenience.
  • For gluten-free option, use tamari instead of soy sauce and gluten-free noodles.
  • Cooking noodles just shy of al dente prevents overcooking when tossed in the sauce.
