Ingredients

Meat Mixture

  • 2 lbs. ground beef (93% lean 7% fat)
  • 1 1/4 cup chopped onion
  • 3 cloves garlic (minced)
  • 2 teaspoons soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Potatoes and Cheese

  • 3 medium Russet potatoes (sliced into rounds about 1/4” thick, skin on)
  • 1 cup mozzarella cheese
  • 1 cup sharp cheddar cheese

Roux & Sauce

  • 1 cup milk (plant-based or whole)
  • 1/2 cup beef broth
  • 3/4 cup Greek yogurt
  • 2 1/2 tbsp butter
  • 2 1/2 tbsp gluten-free all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish thoroughly with cooking spray or butter to prevent sticking.
  2. Cook Ground Beef Mixture: In a large skillet over medium heat, cook the ground beef until browned and no longer pink, breaking it apart as it cooks. Drain all excess fat carefully to avoid a greasy casserole. Add the chopped onion and minced garlic to the skillet and cook for 2-3 minutes until the onion softens. Stir in soy sauce, garlic powder, onion powder, and paprika. Remove from heat and set aside.
  3. Prepare Roux-based Sauce: In a separate saucepan, melt the butter over medium heat. Whisk in the gluten-free flour and cook for 1-2 minutes to form a roux. Gradually add milk and beef broth, whisking constantly until the sauce is smooth and thickened. Remove from heat and whisk in the Greek yogurt until well combined. Season with salt and pepper to taste.
  4. Assemble the Casserole: Layer half of the sliced potatoes evenly on the bottom of the prepared baking dish. Spread half of the cooked ground beef mixture over the potatoes. Pour half of the cream sauce evenly over the beef layer. Repeat the layers with the remaining potatoes, ground beef, and cream sauce.
  5. Add Cheese and Bake: Sprinkle mozzarella and sharp cheddar cheeses evenly over the top of the casserole. Cover the dish with aluminum foil and bake in the preheated oven for 45-50 minutes, or until the potatoes are tender. Remove the foil and bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly and starts to brown slightly.

Notes

  • To make this casserole gluten-free, use a gluten-free all-purpose flour for the roux as noted.
  • If you prefer, you can substitute the homemade roux sauce with a can of condensed cream of mushroom or cream of celery soup for convenience.
  • Leaving the potato skins on adds texture and nutrients; wash well before slicing.
  • Drain all excess fat from the cooked beef to prevent a greasy casserole.
  • For a lighter version, use low-fat milk and Greek yogurt.
