Perfect for an afternoon snack or serving alongside your favorite cup of tea, these cookies offer a tender crumb, subtle citrus notes, and aromatic bergamot flavor to delight your palate.

Ingredients

Cookie Dough

  • 1 cup unsalted butter (softened, 2 sticks)
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla flavoring
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 3 cups all-purpose flour
  • 1 tablespoon Earl Grey tea leaves (about 3 bags)

Glaze

  • 1 cup powdered sugar
  • 4 teaspoons lemon juice

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Prepare several baking sheets by lining them with parchment paper to prevent sticking and ensure even baking.
  2. Cream Butter and Sugar: In a stand mixer bowl, add softened butter and granulated sugar. Beat on high speed for 3 to 5 minutes until the mixture is very light and fluffy, incorporating air for a tender cookie texture.
  3. Add Wet Ingredients: Scrape down the sides of the bowl to ensure even mixing. On low speed, beat in the eggs, vanilla flavoring, baking powder, and salt until fully combined.
  4. Incorporate Dry Ingredients: Scrape the bowl again. Still on low speed, add the flour gradually, about ½ cup at a time. With the last addition of flour, quickly mix in the Earl Grey tea leaves. Mix only until the dough is just combined to avoid overworking.
  5. Portion and Shape Dough: Using a cookie scoop, measure out dough portions of about 1 ½ tablespoons each. Roll each portion into a ball and place them spaced 2 inches apart on the prepared baking sheets.
  6. Bake Cookies: Bake in the preheated oven for 10 to 12 minutes, or until the cookies are puffy in the center and just lightly golden around the edges. Remove from oven and allow to cool on the baking sheets.
  7. Prepare Lemon Glaze: While the cookies cool, whisk together powdered sugar and lemon juice in a small bowl until the glaze is smooth and free of lumps.
  8. Glaze the Cookies: Once cooled, dip the tops of each cookie into the lemon glaze and set them back on parchment paper to allow the glaze to dry and set before serving.

Notes

  • Use high-quality Earl Grey tea leaves for the best aromatic flavor.
  • Do not overmix the dough to keep the cookies tender and avoid tough texture.
  • If you prefer a stronger lemon flavor, you can add lemon zest to the glaze.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • You can freeze the dough balls raw for up to 1 month; thaw before baking.
