Dill Pickle Hummus blends creamy chickpeas with tangy dill pickles and aromatic spices for a refreshing twist on traditional hummus. This healthy and flavorful snack is perfect for dipping or spreading and is easy to prepare in minutes using a blender or food processor.

Ingredients

Hummus Base

  • 1 15-ounce can of garbanzo beans (chickpeas), drained with water reserved, and rinsed
  • 2 ½ tablespoons olive oil
  • 2 tablespoons tahini
  • 2 tablespoons dill pickle juice
  • 1 tablespoon lemon juice
  • 2 - 3 tablespoons reserved chickpea water

Flavorings

  • ½ cup chopped dill pickles
  • 1 ½ teaspoons dill weed
  • ¾ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ⅛ teaspoon cumin

Instructions

  1. Prepare Ingredients: Drain and rinse the chickpeas, reserving the liquid for use later in the recipe. Chop the dill pickles finely.
  2. Combine Ingredients: Add the garbanzo beans, chopped dill pickles, olive oil, tahini, dill pickle juice, lemon juice, dill weed, garlic powder, salt, black pepper, cumin, and 2 tablespoons of the reserved chickpea water into a blender or food processor.
  3. Blend to Smoothness: Process the mixture until completely smooth and well blended. If the hummus is too thick, add an additional tablespoon of reserved chickpea water gradually to reach the desired creamy consistency without making it runny.
  4. Store: Transfer the hummus to a tightly covered container and refrigerate until ready to serve. This will help the flavors meld together.

Notes

  • Use reserved chickpea water cautiously to ensure the hummus maintains a creamy but firm texture.
  • Adjust the amount of dill pickle juice and chopped pickles to taste depending on how tangy you prefer your hummus.
  • This hummus pairs well with fresh vegetables, crackers, or as a sandwich spread.
  • Store refrigerated and consume within 4-5 days for best freshness.
