Ingredients

Wet Ingredients

  • 3/4 cup refined coconut oil or canola oil
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 large egg yolk

Dry Ingredients

  • 2/3 cup cocoa powder, sifted
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon coarse sea salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon espresso powder (optional)

Add-ins

  • 1/2 cup coarsely chopped dairy-free chocolate or dairy-free chocolate chips

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch metal baking pan with parchment paper and set aside for easy removal of brownies after baking.
  2. Mix Wet Ingredients: In a stand mixer bowl fitted with a paddle attachment or a large mixing bowl with a handheld mixer, combine the coconut oil, granulated sugar, brown sugar, and vanilla extract. Mix on medium speed until well combined, about 1 minute.
  3. Add Eggs: Add the two whole eggs and one egg yolk one at a time to the wet mixture, mixing after each addition. After adding all eggs, continue mixing for 30 seconds to fully incorporate.
  4. Rest and Remix: Let the mixture rest for 3 minutes. After resting, mix again for 30 seconds, then repeat this resting and mixing cycle two more times to ensure thorough mixing for a smooth batter.
  5. Combine Dry Ingredients: In a separate medium bowl, whisk together the sifted cocoa powder, all-purpose flour, coarse sea salt, baking powder, and optional espresso powder to evenly distribute all dry components.
  6. Incorporate Dry Ingredients and Chocolate: Slowly add the dry mixture and the chopped dairy-free chocolate into the wet ingredients. Mix just until no white streaks remain, about 30 seconds, being careful not to overmix.
  7. Bake: Pour the brownie batter into the prepared pan and spread evenly. Bake in the preheated oven for 25 to 35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Cool and Serve: Remove the pan from the oven and allow brownies to cool in the pan for 30 minutes before slicing. Enjoy your decadent dairy-free brownies!

Notes

  • Use refined coconut oil if you prefer a neutral flavor; otherwise, unrefined coconut oil will add a subtle coconut taste.
  • Espresso powder is optional but enhances the chocolate flavor for a richer taste.
  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • Dairy-free chocolate chips can be found in specialty stores or online, ensuring the recipe remains completely dairy-free.
  • Allowing the batter to rest and remix cycles helps to develop a smoother, more tender brownie texture.
