Curry Chicken Salad is a delicious and creamy twist on the classic chicken salad, featuring shredded chicken mixed with a flavorful curry-spiced dressing. This easy-to-make recipe combines mayonnaise, curry powder, and aromatic spices to create a satisfying dish perfect for lunches or light dinners, served on bread or as a standalone salad.

Ingredients

Dressing

  • 1/2 cup mayonnaise
  • 1 tablespoon curry powder
  • 1 tablespoon white wine vinegar
  • 1 tablespoon chopped fresh cilantro
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garam masala

Salad

  • 2 cups diced cooked shredded chicken
  • Salt to taste

Optional

  • Sourdough bread for serving

Instructions

  1. Prepare the dressing. In a mixing bowl, whisk together mayonnaise, curry powder, white wine vinegar, chopped fresh cilantro, cumin, and garam masala until smooth and well combined.
  2. Mix the salad. Stir the diced cooked shredded chicken into the dressing until the chicken is evenly coated with the curry mixture.
  3. Chill the salad. Cover the bowl and refrigerate the chicken salad for 30 minutes. This allows the flavors to meld and intensify.
  4. Season to taste. Remove from refrigerator and add salt as needed, mixing gently to incorporate.
  5. Serve. If desired, toast sourdough bread slices and spoon the curry chicken salad onto the bread for a flavorful sandwich. Alternatively, serve it chilled on its own or over greens.

Notes

  • For best flavor, allow the salad to chill for the full 30 minutes before serving.
  • You can substitute Greek yogurt for mayonnaise for a lighter version, though it will alter the creaminess and flavor slightly.
  • Adjust spices according to your taste preference, especially curry powder and garam masala.
  • This salad is great served on its own, in sandwiches, or wrapped in lettuce leaves for a low-carb option.
  • Use cooked leftover chicken or rotisserie chicken to save time.
