A refreshingly light and easy-to-make cucumber sorbet featuring fresh cucumbers, lemon juice, and sugar. Perfect as a palate cleanser or a cooling dessert on warm days, this sorbet combines the natural crispness of cucumbers with the tanginess of lemon juice, all churned to silky smooth perfection in an ice cream maker.

Ingredients

Ingredients

  • 1 ½ pounds cucumbers (peeled and seeded) (680 g)
  • 3 tablespoons fresh squeezed lemon juice (42 g)
  • 1 cup granulated sugar (200 g)

Instructions

  1. Prepare Cucumbers: Peel the cucumbers and remove their seeds to avoid any bitterness or grainy texture. Cut the peeled cucumbers into 2-inch pieces to facilitate smooth processing in the food processor.
  2. Process Mixture: Place the cucumber pieces into a food processor along with the fresh lemon juice and granulated sugar. Blend until the mixture becomes smooth and uniform in texture.
  3. Chill Mixture: Transfer your smooth cucumber mixture into an airtight container. Refrigerate for at least 1 hour and up to 24 hours to allow the flavors to meld and the mixture to chill thoroughly.
  4. Churn Sorbet: Pour the chilled mixture into your ice cream maker and freeze according to the manufacturer's instructions. Process until the sorbet reaches a soft serve consistency.
  5. Freeze to Set: Transfer the soft sorbet to a freezer-safe container and freeze for at least 4 hours. This step firms up the sorbet for an ideal texture.
  6. Serve: Before serving, let the sorbet sit at room temperature for about 5 minutes to soften slightly for easier scooping. Garnish with fresh mint leaves for an appealing presentation and a burst of freshness.

Notes

  • Use English cucumbers for fewer seeds and a tender skin.
  • If you don't have an ice cream maker, you can pour the mixture into a shallow dish, freeze, and stir every 30 minutes to mimic churning.
  • Adjust sugar amount based on the sweetness of your cucumbers or your taste preferences.
  • Garnishing with fresh mint leaves adds a lovely aroma and complementing flavor.
  • For a dairy-free and vegan-friendly dessert, this recipe is naturally suitable as is.
