This Crockpot Greek Chicken Gyros recipe offers a deliciously easy way to enjoy tender, slow-cooked chicken infused with classic Greek flavors like lemon, oregano, and olive oil. Perfectly shredded and served in warm pita with fresh vegetables and creamy tzatziki, this dish makes a flavorful, wholesome meal ideal for any day.

Ingredients

Chicken and Marinade

  • 3 large boneless, skinless chicken breasts (about 1.5 to 2 pounds)
  • 1 sweet onion, sliced thin into half moon shapes
  • 1/4 cup freshly squeezed lemon juice (from 2 large lemons)
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons vinegar
  • 1½ teaspoons dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

To Serve

  • Pita bread (such as Papa Pita White Greek Pita Flat Bread)
  • Shredded lettuce (iceberg or green leaf lettuce)
  • Chopped tomatoes
  • Finely chopped cucumber
  • Tzatziki sauce or dip (purchased or homemade)
  • Optional toppings: Kalamata olives, feta cheese

Instructions

  1. Prepare the Crockpot: Spray the insert of the crockpot with nonstick cooking spray. Evenly layer the sliced onions at the bottom. Place the chicken breasts on top, cutting larger breasts in half if desired for better fit.
  2. Make and Add Marinade: In a small bowl, whisk together lemon juice, olive oil, vinegar, oregano, salt, and pepper. Pour the marinade evenly over the chicken, ensuring all pieces are well coated. Use a spatula to scrape out any remaining marinade from the bowl.
  3. Cook: Cover the crockpot and cook on LOW for 6 to 7 hours, allowing the flavors to meld and the chicken to become tender enough to shred.
  4. Shred Chicken: Remove chicken from crockpot and transfer to a plate or cutting board. Use two forks to shred the chicken finely, then return it to the crockpot and stir to combine with the onions and juices.
  5. Assemble Gyros: Warm pita bread in the microwave. Spread a generous amount of tzatziki sauce on the pita, add a spoonful of the shredded Greek chicken, then top with lettuce, tomato, cucumber, and optional toppings like Kalamata olives and feta cheese. Add more tzatziki if desired, then fold and enjoy.

Notes

  • For added flavor, consider marinating the chicken in the seasoning mixture for an hour before cooking.
  • Use homemade tzatziki for a fresher taste or opt for a store-bought version for convenience.
  • You can add kalamata olives and feta cheese as optional toppings to enhance authenticity.
  • Leftover chicken gyros can be refrigerated for up to 3 days and reheated gently.
  • Adjust seasoning to taste, especially salt and pepper, before serving.
