A comforting and easy CrockPot Chicken Tortellini recipe that combines tender chicken breasts with marinara sauce, cheese tortellini, and creamy cheeses, slow-cooked to perfection and finished with fresh spinach and Parmesan for a delicious, hearty meal.

Ingredients

Chicken and Sauce

  • Olive oil spray
  • 1 1/2 lb chicken breast (about 4 medium breasts)
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red chili flakes
  • 1 1/2 cups chicken broth

Pasta and Cheese

  • 1 lb cheese tortellini
  • 1 cup mozzarella cheese (shredded)
  • 1/2 cup heavy cream
  • 2 cups baby spinach
  • 1/3 cup Parmesan cheese (grated)

Instructions

  1. Prepare Slow Cooker: Spray your slow cooker with olive oil or a non-stick cooking spray to prevent sticking.
  2. Layer Chicken: Arrange the chicken breasts in a single layer on the bottom of the slow cooker to ensure even cooking.
  3. Add Seasonings and Liquids: Pour in the marinara sauce, garlic powder, onion granules, Italian seasoning mix, paprika, red chili flakes, and chicken broth, making sure the chicken is completely submerged in the liquid.
  4. Cook Chicken: Cook on LOW for 4 hours or until the chicken reaches an internal temperature of 165°F, ensuring it is fully cooked and tender.
  5. Shred Chicken: Remove the chicken breasts and shred them using two forks.
  6. Add Pasta and Cream: Return the shredded chicken to the slow cooker, add the cheese tortellini, shredded mozzarella cheese, and heavy cream. Stir well to combine, making sure the tortellini is fully covered with liquid.
  7. Cook Tortellini: Cover and cook on LOW for 30 minutes until the tortellini is tender and cooked through.
  8. Add Spinach: Stir in the baby spinach and continue cooking for another 10 minutes to let the spinach wilt.
  9. Finish and Serve: Stir in the grated Parmesan cheese, adjust seasoning as needed, and serve immediately while hot.

Notes

  • Ensure the chicken is fully submerged in liquid to cook evenly and stay moist.
  • Use fresh baby spinach for the best texture and flavor.
  • Check tortellini tenderness as cooking times may vary slightly depending on your slow cooker model.
  • For a spicier dish, increase the amount of red chili flakes.
  • This dish can be served with a side of garlic bread or a fresh salad for a complete meal.
  • Leftovers can be refrigerated for up to 3 days and reheated gently to avoid drying out.
