Crispy Roasted Chickpeas are a healthy, oven-baked snack perfect for any time of day. Packed with fiber and protein, these crunchy chickpeas are coated with three distinct flavors—sweet, ranch, and spicy—making them an irresistible and versatile snack option that keeps you full and satisfied.

Ingredients

Chickpeas

  • 3 (15 oz) cans organic low sodium garbanzo beans (1 can per flavor)
  • 1-2 tbsp olive oil

Sweet Coating

  • 1 tbsp maple syrup
  • ½ tsp cinnamon

Ranch Coating

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried dill
  • ½ tsp dried parsley
  • ½ tsp salt

Spicy Coating

  • ½ tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp cayenne pepper
  • ¼ tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to ensure it’s hot and ready for roasting the chickpeas evenly.
  2. Prepare Chickpeas: Drain and rinse the chickpeas in a strainer under cold water. Then, lay them out on a kitchen towel to pat dry, removing any loose skins. Let them air dry completely to ensure crispiness when roasted.
  3. Prepare Baking Sheet: Line a rimmed baking sheet with a silicone baking mat or parchment paper. If using parchment, lightly spray with cooking oil such as avocado oil to prevent sticking.
  4. Roast Chickpeas: Spread the dried chickpeas evenly across the baking sheet. Roast them in the oven for 20 to 30 minutes, stirring every 10 minutes to promote even browning, until they turn golden and crispy.
  5. Make Spice Mixes: While the chickpeas roast, combine the ingredients for the sweet, ranch, and spicy coatings each in separate small bowls and set aside.
  6. Divide Chickpeas: When the chickpeas are still hot, divide them evenly into three bowls—one for each flavor coating.
  7. Coat Ranch and Spicy: To the bowls for ranch and spicy flavors, add ½ to 1 tablespoon of olive oil and toss to coat the chickpeas evenly. Then add the respective spice mixes and toss again until fully coated.
  8. Coat Sweet: Pour the maple syrup and cinnamon mixture over the sweet chickpeas and toss to coat well. Place these back in the oven to bake an additional 5 to 10 minutes to caramelize the coating.
  9. Serve: Once roasted and coated, serve immediately for the best crunch and flavor.

Notes

  • Make sure chickpeas are completely dry before roasting to achieve maximum crispiness.
  • Stirring every 10 minutes during roasting helps prevent burning and ensures even cooking.
  • For an oil-free version, omit olive oil in the ranch and spicy coatings but expect slightly less adhesion of spices.
  • Store any leftovers in an airtight container at room temperature for up to 3 days; crispiness may decrease over time.
  • Customize spice levels by adjusting cayenne pepper in the spicy coating to suit your heat preference.
