Tahdig is a traditional Persian basmati rice dish featuring a crispy, golden buttery crust infused with fragrant saffron and turmeric. This side dish offers a delightful contrast of textures—crispy on the outside and fluffy on the inside—perfect to accompany Mediterranean meals.

Ingredients

Rice and Prep

  • 2 cups basmati rice, rinsed very well until water runs clear
  • ½ cup kosher salt
  • ¼ teaspoon saffron threads, ground with the bottom of a wooden spoon (optional)

Yogurt Mixture

  • 3 tablespoons Greek yogurt
  • 1 large egg
  • 1 teaspoon turmeric

For Cooking

  • 3 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 3 tablespoons water (to dissolve saffron)

Instructions

  1. Prepare the rice: Fill a large stockpot with 4 quarts of water and bring to a boil over high heat. Add ½ cup kosher salt. Add the rinsed basmati rice and stir. Cook until the rice is al dente, about 4-5 minutes. Drain the rice and rinse it under cold water to stop the cooking process.
  2. Prepare saffron water: If using saffron, mix the ground saffron threads with 3 tablespoons of water in a microwave-safe bowl. Microwave for 20 seconds to release the flavors, then set aside.
  3. Make the yogurt mixture: In a large bowl, combine Greek yogurt, egg, turmeric, and half of the saffron water (if using). Add 2 ½ cups of the cooked rice to this mixture and stir gently to coat evenly.
  4. Heat the pan: Place a 10-inch or 11-inch nonstick or cast iron skillet or Dutch oven over medium heat. Add the unsalted butter and olive oil. Once the butter has melted, add the yogurt-rice mixture to the pan. Gently press the rice to spread it evenly and press it up the sides of the pan to form a crust.
  5. Add remaining rice: Add the remaining cooked rice on top of the yogurt layer, being careful not to press it down. Drizzle the remaining half of the saffron water evenly over the top (if using).
  6. Cook the rice: Increase the heat to medium-high until the rice starts sizzling. Let it cook for 5 minutes, then reduce the heat to medium-low. Cover the pan with a lid wrapped in a clean kitchen towel to absorb steam, and cook for 15-17 minutes until the rice is fully cooked and the edges form a golden-brown crust.
  7. Serve: To remove the rice, carefully run a rubber spatula around the edges of the pan. Place a large plate over the skillet, larger than the pan’s circumference, and swiftly flip the pan over to release the crispy tahdig. Garnish with fresh dill and serve immediately.

Notes

  • The kosher salt added to the boiling water helps season the rice, but most is drained off, so the dish is not overly salty.
  • Using a nonstick or cast iron skillet helps create a better crispy crust without sticking.
  • Wrapping the lid with a clean towel prevents condensation from dripping onto the rice, ensuring a crisp crust.
  • Saffron is optional but highly recommended for authentic flavor and vibrant color.
  • Be gentle when mixing the turmeric and yogurt with the rice to avoid breaking the grains.
