Crispy Crunchy Chickpeas are a perfectly spiced, delicious, and addictive snack that stay crispy and crunchy. They make an ideal topping for salads or a tasty accompaniment to meals, offering a healthy and flavorful option packed with texture and zest.

Ingredients

Chickpeas

  • 1 15-ounce can chickpeas (I use GOYA)

Seasoning & Oil

  • 1 tablespoon olive oil
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ⅛ teaspoon cayenne pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375℉. This temperature ensures even roasting and crisping of the chickpeas. See the Notes section for alternative temperature tips.
  2. Prepare Chickpeas: Rinse and strain the canned chickpeas thoroughly. Place them on paper towels and pat dry to absorb any excess moisture, which is key for achieving crispiness.
  3. Toss with Seasonings: In a mixing bowl, combine the dried chickpeas with olive oil, cumin, smoked paprika, kosher salt, pepper, and cayenne pepper. Toss well to evenly coat each chickpea with the spices and oil.
  4. Arrange on Baking Sheet: Spread the coated chickpeas evenly out on a baking sheet in a single layer to allow even roasting.
  5. Roast and Toss: Roast the chickpeas in the oven for 30 minutes. Then, remove the baking sheet and toss the chickpeas to ensure even cooking and crispiness.
  6. Final Roast: Return the chickpeas to the oven and roast for an additional 25 to 30 minutes, or until they are darkened and crispy to your liking. Cooking times may vary depending on your oven. Check the chickpeas 5 minutes before the end of cooking to prevent burning. I prefer them darker, so I sometimes roast a little longer.

Notes

  • You can roast chickpeas at either 375℉ or 400℉. Roasting at 400℉ results in a darker, crispier chickpea in about 50–55 minutes.
  • At 375℉, chickpeas still come out crispy but take slightly longer and are less dark.
  • Always check your chickpeas about 5 minutes before the end of cooking to prevent overcooking or burning.
  • Removing as much moisture as possible before roasting is essential for maximum crispiness.
