A deliciously crispy chicken croissant sandwich featuring juicy breaded chicken breasts, a tangy lemon-yogurt dressing, fresh avocado and romaine lettuce, all sandwiched in buttery Parmesan-crusted croissants and optionally drizzled with hot honey for a perfect balance of flavors and textures.

Ingredients

For the Chicken:

  • 2 boneless skinless chicken breasts (about 1 ½ lbs)
  • Kosher salt and black pepper (for seasoning)
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 3 large eggs
  • 1 cup panko bread crumbs
  • ¼ cup freshly grated Parmesan cheese
  • Vegetable oil (for frying, quantity as needed)

For the Lemon Yogurt Dressing:

  • ½ cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Kosher salt and pepper to taste

For the Sandwich Assembly:

  • 4 croissants
  • 2 tablespoons melted butter
  • ¾ cup Parmesan cheese, divided
  • 4 cups chopped Romaine lettuce
  • 2 avocados, sliced
  • Hot honey for drizzling (optional)

Instructions

  1. Prepare the Chicken: Place the chicken breasts on a cutting board. Use a sharp knife to butterfly the chicken horizontally and then cut each breast in half, creating 4 equal-sized pieces.
  2. Make the Flour Mixture: In a medium shallow bowl or baking dish, combine the flour, garlic powder, ½ teaspoon salt, and ¼ teaspoon black pepper. Set aside.
  3. Prepare the Egg Wash: In a separate medium bowl, whisk the eggs and set aside.
  4. Prepare the Bread Crumb Mixture: In a third medium shallow bowl, combine the panko bread crumbs and ¼ cup grated Parmesan cheese.
  5. Bread the Chicken: Dredge each chicken piece in the flour mixture, shaking off excess. Dip into the eggs, ensuring it is well coated and allowing excess to drip off. Press into the panko-Parmesan mixture, coating both sides thoroughly. Repeat for all chicken pieces.
  6. Cook the Chicken: Heat vegetable oil in a large cast iron skillet over medium-high heat. Once hot, carefully place 1 or 2 chicken pieces in the oil. Fry for 2 to 3 minutes per side until golden brown and cooked through. Remove and place on paper towel-lined plate to drain excess oil. Repeat with remaining chicken, adding oil as needed.
  7. Make the Lemon Yogurt Dressing: In a small bowl or jar, whisk together the Greek yogurt, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until smooth. Set aside.
  8. Prepare the Croissants: Preheat the broiler. Using a serrated knife, slice the croissants lengthwise. Place on a large baking sheet, brush the insides and tops with melted butter, then sprinkle ¼ cup Parmesan cheese evenly over the tops. Broil for 1-2 minutes until slightly toasted and cheese is melted. Watch carefully to avoid burning. Remove from oven.
  9. Toss the Lettuce: In a medium bowl, combine chopped Romaine lettuce, the remaining Parmesan cheese, and the lemon yogurt dressing. Toss with tongs until lettuce is evenly coated.
  10. Assemble the Sandwiches: Place the cooked chicken pieces on the bottom halves of the croissants, cutting chicken if needed. Drizzle with hot honey if desired. Top with avocado slices and the dressed lettuce mixture. Cover with the Parmesan-crusted croissant tops and serve immediately.

Notes

  • Be sure to broil the croissants only for 1-2 minutes to avoid burning the Parmesan cheese.
  • Freshly grated Parmesan cheese adds better flavor and melts more evenly compared to pre-grated cheese.
  • Use a cast iron skillet or a heavy-bottomed pan for even heat distribution while frying the chicken.
  • Butterflying the chicken breasts helps them cook quickly and evenly.
  • Hot honey is optional but adds a nice sweet-spicy kick that complements the crispy chicken.
  • Leftover sandwiches can be wrapped tightly and stored in the fridge for up to 2 days but are best served fresh.
