These Crispy Buffalo White Bean Tacos are a flavorful and satisfying vegan meal, featuring spiced cannellini beans simmered in buffalo sauce and pan-fried until crispy. Perfect as a quick weeknight dinner or a tasty party appetizer, these tacos combine smoky spices and tangy buffalo heat in a wholesome plant-based wrap.

Ingredients

Main Ingredients

  • 1 Tbsp olive oil (15 mL)
  • ½ medium yellow onion, diced
  • 2 cloves garlic, minced
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp ground coriander seeds
  • ½ tsp black pepper
  • ¼ tsp salt
  • 2 cans cannellini beans, 13 oz each (drained; approx. 370 g cans)
  • ½ cup buffalo sauce (120 g)
  • 8 small corn tortillas
  • 2 to 4 Tbsp cooking oil (for frying)

Instructions

  1. Prepare the Flavor Base: Heat 1 tablespoon of olive oil over medium heat in a large skillet. Add the diced onion and minced garlic, cooking for about 4 minutes until the onion becomes soft and fragrant. Stir in smoked paprika, cumin, ground coriander, black pepper, and salt, cooking for an additional minute to release the spices' aromas.
  2. Mash the Beans: Add the drained cannellini beans and buffalo sauce to the skillet. Using a potato masher or fork, roughly mash the beans, ensuring a chunky consistency without fully pureeing. Scoop the mixture out into a bowl. Rinse the skillet clean and place it back on the stove for the next step.
  3. Assemble the Tacos: Wrap the corn tortillas in a damp paper towel and microwave for 45 seconds to make them pliable. Spoon the buffalo bean mixture evenly onto each tortilla and gently fold in half to form tacos.
  4. Cook the Tacos: Lightly coat the skillet with 2 to 4 tablespoons of cooking oil. Working in batches, cook the tacos over medium heat until both sides are golden brown and crispy, carefully flipping them for even crisping.
  5. Serve: Serve the crispy buffalo white bean tacos warm, accompanied by your favorite salsa, guacamole, or cilantro sauce for added flavor.

Notes

  • For a dairy-free and vegan option, use a plant-based buffalo sauce.
  • To make cilantro sauce: blend fresh cilantro leaves, lime juice, garlic, a pinch of salt, and olive oil until smooth.
  • Use a nonstick or cast-iron skillet for best results when frying the tacos.
  • Adjust the spice level by choosing mild or hot buffalo sauce according to preference.
  • Tacos can be kept warm by placing them in an oven set to low heat while frying batches.
