A quick and delicious creamy tomato pasta recipe that combines rich tomato sauce, fragrant garlic, and smooth cream to create a comforting meal in just 20 minutes. Perfect for a weeknight dinner, this pasta dish is elevated with Parmesan cheese and Italian seasoning for a flavorful touch.

Ingredients

Pasta

  • 8 ounces pasta

Sauce

  • 2 Tablespoons butter
  • 2-3 cloves garlic, minced
  • 1 (14 ounce) can tomato sauce
  • 2 Tablespoons tomato paste
  • 1/2 cup chicken or vegetable broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup cream
  • Kosher salt, to taste
  • Black pepper, to taste

To Serve

  • Parmesan cheese, for serving

Instructions

  1. Cook the pasta: Boil a large pot of salted water. Add the pasta and cook until al dente according to package instructions. Drain the pasta and set it aside.
  2. Prepare the garlic butter: While the pasta is cooking, melt the butter in a large skillet over medium-high heat. Add the minced garlic and sauté for 30 to 60 seconds until fragrant but not browned.
  3. Make the tomato sauce: Add the tomato sauce, tomato paste, chicken or vegetable broth, and Italian seasoning to the skillet. Stir to combine and let the sauce simmer for 1 to 2 minutes to meld the flavors.
  4. Add cream and season: Reduce the heat to medium and stir in the cream. Let the sauce simmer for an additional 2 to 3 minutes until it thickens slightly. Season the sauce with kosher salt (starting with 1/4 teaspoon) and black pepper (about 8 to 10 cranks) to taste.
  5. Toss pasta with sauce and serve: Add the drained pasta to the sauce and toss well to coat evenly. Serve immediately with generous sprinkles of Parmesan cheese on top.

Notes

  • Use chicken broth for a richer flavor or vegetable broth to keep it vegetarian.
  • Adjust cream quantity to make the sauce lighter or more indulgent.
  • For a vegan version, substitute butter with olive oil, cream with coconut cream or cashew cream, and Parmesan with a vegan cheese alternative.
  • Be careful not to overcook the garlic to avoid bitterness.
  • Reserve some pasta water to loosen the sauce if it becomes too thick.
