A delicious and savory spinach pie made with a flaky pie crust, sautéed spinach and onions, and a rich blend of feta, ricotta, and parmesan cheeses. Perfect as a hearty appetizer or main dish, this baked spinach pie is flavorful and comforting with fresh herbs and a golden crust.

Ingredients

Pie Crust

  • 1 refrigerated pie crust (or homemade)

Filling

  • 3 tablespoons olive oil
  • ⅔ cup yellow onion, minced
  • 3 cloves garlic, minced
  • 20 ounces spinach, stems removed and chopped
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons dried dill
  • 1 cup crumbled feta cheese
  • 1 cup ricotta cheese
  • 1 cup shredded parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 large eggs, beaten

Instructions

  1. Prepare Oven and Pie Crust: Preheat the oven to 350°F (175°C). Line a 9-inch pie dish with the refrigerated pie crust and place the crust-lined dish in the refrigerator to keep it cold while you prepare the filling.
  2. Sauté Vegetables: Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Add the minced yellow onion and sauté until tender. Add the chopped spinach and minced garlic, cooking until the spinach has wilted down. Remove the mixture from heat and set aside.
  3. Mix Cheeses and Herbs: In a large bowl, whisk together the fresh parsley, dried dill, crumbled feta, ricotta, shredded parmesan, salt, pepper, and beaten eggs until well combined.
  4. Combine Filling: Add the sautéed spinach and onion mixture to the cheese mixture and stir thoroughly to combine all ingredients evenly.
  5. Assemble Pie: Remove the pie crust from the refrigerator. Pour the spinach and cheese filling into the prepared pie crust, spreading it evenly.
  6. Bake: Bake the pie in the preheated oven for 45-50 minutes, or until the top is golden brown and the filling is set.
  7. Rest and Serve: Remove the spinach pie from the oven and let it rest for at least 5 minutes before slicing and serving.

Notes

  • For a homemade crust, you may substitute the refrigerated pie crust with your favorite pie dough recipe.
  • Ensure the spinach is well drained after sautéing to avoid a soggy pie filling.
  • Allowing the pie to rest before serving helps the filling to set and makes slicing easier.
  • Use fresh herbs if preferred, adjusting quantity to taste.
  • This pie can be served warm or at room temperature.
