A nutritious and delicious chia pudding with protein, perfect for a healthy breakfast or snack. This recipe combines fresh or frozen peaches, banana, almond or coconut milk, chia seeds, and optional vegan protein powder for a creamy, smoothie-based pudding that's easy to prepare and customizable with toppings like non-dairy yogurt and fresh mint.

Ingredients

Fruits

  • 1 medium to large peach, sliced or 1 cup frozen peach slices
  • 1 small ripe banana

Base and Sweetener

  • 1 cup unsweetened almond milk or coconut milk
  • 2 tablespoons maple syrup or honey (to taste)

Chia Mixture

  • 1/4 – 1/3 cup chia seeds (adjust to desired thickness)
  • Pinch of ground cinnamon

Optional Additions

  • 40–50 grams vegan vanilla protein powder
  • 2 tablespoons hemp seeds

Toppings

  • 1/3 cup non-dairy yogurt of choice
  • Sliced fruit
  • Fresh mint leaves

Instructions

  1. Blend the fruits and milk: Place peach slices, banana, almond or coconut milk, and maple syrup into a blender or food processor. Blend until the mixture reaches a smooth, smoothie-like texture, ensuring all ingredients are fully combined.
  2. Combine with chia seeds: Transfer the blended mixture into a large bowl or divide evenly into 2-3 meal prep jars. Stir in the chia seeds, using about 2-3 tablespoons per jar or appropriate amount for the bowl.
  3. Add spices and optional ingredients: Sprinkle in a pinch of ground cinnamon, the vegan vanilla protein powder (if using), and hemp seeds (divided between jars or all in one bowl). Stir thoroughly to combine all ingredients evenly.
  4. Refrigerate to thicken: Cover the bowl or jars with a lid or plastic wrap and refrigerate for a minimum of 1 hour, or up to 24 hours. Refrigerating overnight results in a thicker, more pudding-like texture.
  5. Serve and garnish: Remove from the fridge and either spoon the pudding from the large bowl into serving bowls or serve directly from the jars. Top each serving with non-dairy yogurt, additional sliced peach, and fresh mint leaves if desired for added flavor and presentation.
  6. Store leftovers: Keep any extra chia pudding covered in the refrigerator for up to 5 days, allowing for convenient future meals or snacks.

Notes

  • For a smoother texture, blend the fruit and milk thoroughly before adding chia seeds.
  • You can adjust the thickness by varying the amount of chia seeds used; more chia seeds create a thicker pudding.
  • Try different plant-based milk options like oat or soy milk for variations in flavor.
  • Protein powder can be substituted with any preferred vegan or non-vegan protein powder depending on dietary preferences.
  • Maple syrup can be replaced with honey if not strictly vegan.
  • Optional hemp seeds add extra protein and healthy fats but can be omitted if desired.
  • Use fresh or frozen fruit depending on availability and seasonality.
