Ingredients

Lentils & Liquids

  • 1 cup (190 g) dry green lentils
  • 3 cups (720 ml) vegetable broth
  • 1 cup (240 ml) canned coconut milk

Vegetables & Aromatics

  • 1 medium onion, chopped
  • 1 large carrot (200 g), finely diced
  • 3 cloves garlic, minced
  • 2 tsp fresh ginger, grated
  • 1 red or green chili pepper, seeds removed

Spices & Oils

  • 1 tbsp coconut oil or vegetable oil
  • 2 tsp ground cumin
  • 2 tsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • Salt and black pepper to taste

Instructions

  1. Prepare Lentils and Vegetables: Sort and rinse the lentils, removing any shriveled ones. Optionally, soak the lentils in lukewarm water for 15 minutes for better digestibility, then drain the water. Finely dice the carrot, onion, chili pepper, ginger, and mince the garlic.
  2. Sauté Aromatics: Heat the coconut or vegetable oil in a large saucepan or pot over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic, grated ginger, diced carrot, and chopped chili pepper. Stir and reduce heat to low.
  3. Temper Spices: In the same pan, add the ground cumin, curry powder, turmeric, and coriander to the oil and cook for about 1 minute until the spices become deep in color and fragrant. This step enhances the flavor of the spices significantly.
  4. Add Lentils and Broth: Add the soaked and drained lentils to the pot along with the vegetable broth. Stir to combine, then bring the mixture to a boil. Reduce heat to a simmer and cook for about 15 minutes.
  5. Simmer with Coconut Milk: Stir in the canned coconut milk and continue cooking for an additional 10-15 minutes, allowing the dal to thicken and the lentils to become tender. Optionally, puree about one-quarter to one-third of the dal for a creamier texture.
  6. Season and Serve: Taste and adjust salt and black pepper to your preference. Serve the lentil dal hot, accompanied by rice or naan bread, and garnish with fresh parsley and optionally with non-dairy yogurt for extra creaminess.

Notes

  • Soaking lentils is optional but helps make them more digestible.
  • You can use either red or green chili depending on heat preference, removing seeds reduces spiciness.
  • For a thicker, creamier dal, puree a portion of it after cooking.
  • Double the recipe if planning to have leftovers.
  • Serve with rice, naan, and garnish with parsley or non-dairy yogurt as desired.
