This Creamy Dill Chicken recipe features tender chicken breasts cooked in a fragrant dill-infused creamy sauce. It’s a quick and elegant stovetop dish that combines sautéed chicken with a rich reduction of chicken broth, cream, and butter, finished with fresh dill for a burst of herbal freshness. Perfect for an easy weeknight dinner that feels indulgent yet balanced.

Ingredients

Chicken and Cooking

  • 2 chicken breasts, sliced into fillets or strips
  • 1 tablespoon cooking oil
  • 1/2 medium onion, sliced or diced

Sauce and Seasonings

  • 1 cup chicken broth
  • 2 tablespoons cream (18% fat recommended)
  • 2 tablespoons unsalted butter
  • 3 teaspoons fresh dill, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the Pan: Heat a non-stick frying pan over medium heat to prepare for sautéing the chicken.
  2. Cook the Chicken: Add the cooking oil to the pan, then place the chicken strips in the pan. Cook each side for 2-3 minutes until the chicken is almost cooked through and slightly golden.
  3. Sauté the Onions: Add the sliced onions to the pan with the chicken and cook for about 4 minutes until the onions soften and become translucent.
  4. Remove Chicken Temporarily: Transfer the chicken breasts to a plate to rest while you prepare the sauce in the same pan.
  5. Reduce the Broth: Pour the chicken broth into the pan and allow it to cook down over medium heat for about 10 minutes until it has reduced by approximately half, concentrating the flavors.
  6. Reincorporate Chicken and Add Cream: Return the chicken to the pan, pour in the cream, and stir gently. Heat through for a few minutes until the chicken is fully cooked and the sauce is warm.
  7. Add Butter and Dill: Stir in the unsalted butter and whisk as it melts into the sauce, giving it a silky texture. Remove the pan from heat and fold in the chopped fresh dill. Season with salt and freshly ground black pepper to taste.
  8. Serve: Plate the creamy dill chicken immediately while hot and enjoy the rich, herbaceous flavors.

Notes

  • Use fresh dill for the best flavor; dried dill can be used but reduce quantity by half.
  • The cream can be substituted with half-and-half for a lighter sauce, though the texture will be less rich.
  • Ensure not to overcook the chicken as it will continue to cook slightly when added back to the sauce.
  • This dish pairs well with steamed rice, mashed potatoes, or crusty bread to soak up the creamy sauce.
