Ingredients

For Cooking

  • 1 tbsp coconut oil

Vegetables and Herbs

  • 1/2 cup onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 2 tbsp basil, chopped
  • 1/8 tsp red pepper flakes (optional, to taste)
  • 2 cups tomatoes, chopped

Other Ingredients

  • 1 1/3 cup canned lite coconut milk (use full fat for Paleo/Whole30/Low Carb)
  • 2 lb raw shrimp, peeled and deveined
  • Salt and pepper, to taste

Instructions

  1. Saute aromatics: Heat the coconut oil over medium-high heat in a large skillet. Add the chopped onion and cook for 3-4 minutes until it starts to soften.
  2. Add aromatics and seasonings: Incorporate the minced garlic, minced ginger, chopped basil, and red pepper flakes into the skillet. Cook for about 1 minute until the mixture becomes fragrant.
  3. Cook tomatoes: Add the chopped tomatoes to the skillet and cook until they soften and start releasing their liquid. Season with salt and pepper according to your taste.
  4. Make coconut milk sauce: Pour in the lite coconut milk and bring the mixture to a simmer. Let it cook gently for 5 minutes to allow the flavors to meld. Taste the sauce and adjust seasoning with salt and pepper as needed.
  5. Cook shrimp in sauce: Add the peeled and deveined shrimp to the skillet. Cook for 4-7 minutes, or until the shrimp turn pink and are cooked through. Garnish with additional chopped basil before serving.

Notes

  • Use full-fat coconut milk if adhering to Paleo, Whole30, or Low Carb diets for a richer and creamier sauce.
  • Adjust red pepper flakes based on your preferred spice level or omit for a milder dish.
  • Ensure shrimp are peeled and deveined for the best texture and flavor.
  • Serve this dish over rice, cauliflower rice, or zucchini noodles for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 2 days and reheated gently on the stove.
