Ingredients

Chicken

  • 4 boneless skinless chicken breasts (about 1 pound, pounded to ½-inch thickness)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil (divided)

Sauce

  • 3 cloves shallots, finely chopped
  • 2 cloves garlic, minced
  • 1 cup low sodium chicken broth
  • ½ cup heavy cream
  • 1 to 2 tablespoons butter, cut into several cubes
  • 1 tablespoon chopped fresh cilantro (plus more for garnish)
  • 1 chipotle chile pepper in adobo sauce, finely chopped
  • 1 teaspoon adobo sauce (optional)
  • Fresh lime wedges, for serving

Instructions

  1. Prepare the Chicken: Pound the chicken breasts to about ½-inch thickness to ensure even cooking. Season both sides with salt and freshly ground black pepper.
  2. Heat the Oil: In a large skillet over medium-high heat, heat 1½ tablespoons of olive oil until hot but not smoking.
  3. Cook the Chicken: Add the chicken breasts to the hot oil and cook for 5 to 6 minutes on each side until cooked through and no longer pink inside. Use a meat thermometer to ensure the internal temperature reaches 165°F. Once cooked, remove chicken from skillet and keep covered on a plate.
  4. Sauté Aromatics: Return the skillet to medium-high heat and add the remaining olive oil. Stir in finely chopped shallots and minced garlic; cook for about 1 minute until fragrant and translucent.
  5. Deglaze and Reduce: Gradually pour in the chicken broth, stirring to scrape up all browned bits from the skillet’s bottom. Bring to a boil and let simmer gently for 10 minutes until the liquid is reduced to about ⅓ cup.
  6. Add Cream and Butter: Reduce heat to medium and whisk in the heavy cream. Add butter cubes a few at a time, stirring after each addition until fully melted. For an extra creamy sauce, add the remaining tablespoon of butter.
  7. Flavor the Sauce: Stir in chopped fresh cilantro, chopped chipotle chile pepper, and adobo sauce if using. Mix well to combine flavors.
  8. Season to Taste: Taste the sauce and adjust salt and pepper as needed to balance flavors perfectly.
  9. Reheat Chicken: Return the cooked chicken breasts to the skillet with the sauce, cooking for an additional 1 minute just to heat through and coat the chicken in the sauce.
  10. Serve: Remove skillet from heat, garnish with extra cilantro, and serve with fresh lime wedges on the side for squeezing over the chicken.

Notes

  • For an extra smoky flavor, adjust the amount of chipotle pepper and adobo sauce according to your heat preference.
  • Use a meat thermometer to ensure perfectly cooked chicken without drying it out.
  • Serve with rice, tortillas, or steamed vegetables to complete the meal.
  • Leftover chicken and sauce can be refrigerated for up to 3 days and reheated gently on the stovetop.
  • Substitute heavy cream with half-and-half for a lighter sauce, but the sauce will be less rich.
