Ingredients

Base and Vegetables

  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp unsalted butter
  • 1 medium onion, diced, about 1½ cups
  • 2 medium carrots, peeled and diced into ¼-inch cubes, about 1½ cups
  • 2 celery stalks, diced into ¼-inch pieces
  • ½ tsp Kosher salt
  • ¼ tsp freshly ground black pepper, plus more for serving
  • 4 cloves garlic, finely chopped
  • 2 sprigs rosemary leaves finely chopped, about 1 Tbsp
  • 2 tsp thyme leaves
  • ½ tsp curry powder

Soup Thickener and Broth

  • ¼ cup all-purpose flour
  • 4 cups reduced-sodium chicken broth

Protein and Gnocchi

  • 2 cups shredded rotisserie chicken, white meat only
  • 1 Parmesan rind, optional
  • 16 oz (1 lb) dried potato gnocchi

Greens and Dairy

  • 5 oz fresh baby spinach
  • 1 cup whole milk or coconut milk
  • ¼ cup Parmigiano Reggiano, freshly shaved, for serving

Serving

  • Baguette, for serving

Instructions

  1. Make the broth: Heat 2 Tbsp olive oil and 2 Tbsp butter in a large soup pot over medium-high heat. Add the diced onion, carrots, and celery, seasoning with ½ tsp kosher salt and ¼ tsp black pepper. Cook, stirring occasionally, until the vegetables are translucent, about 3-5 minutes. Next, add chopped garlic, rosemary, thyme, and curry powder and cook for another minute to bloom the spices and develop aroma.
  2. Create the roux: Reduce heat to medium and add ¼ cup flour to the pot. Stir constantly to coat the vegetables and absorb any liquid, cooking for 1-2 minutes until the roux thickens slightly but does not brown.
  3. Incorporate broth and chicken: Whisk in 4 cups of chicken broth slowly, ensuring there are no lumps from flour. Add the shredded rotisserie chicken and Parmesan rind if using. Bring the mixture to a gentle simmer and cook for 10-15 minutes to meld the flavors and slightly thicken the soup.
  4. Add gnocchi and spinach: Carefully add the dried potato gnocchi and fresh spinach to the simmering soup along with 1 cup of milk. Stir gently and cook for 3-5 minutes more, until the gnocchi float to the top, indicating they are cooked through. Remove the Parmesan rind at this stage.
  5. Finish and serve: Taste the soup and adjust the seasoning, adding additional kosher salt and black pepper as desired. Serve immediately topped with freshly shaved Parmesan and plenty of cracked black pepper. Accompany with a warm baguette for a complete and comforting meal.

Notes

  • Using rotisserie chicken speeds up prep and adds flavorful cooked chicken without extra cooking time.
  • The curry powder adds a subtle warmth and intrigue but can be adjusted or omitted based on preference.
  • If desired, substitute whole milk with coconut milk for a dairy-free version.
  • The Parmesan rind enhances depth of flavor but is optional if unavailable.
  • For a thicker soup, allow it to simmer longer after adding the broth.
  • Serve with crusty bread and a fresh salad for a complete meal.
