This creamy Cottage Cheese Queso Dip is a delicious and healthier twist on traditional queso, blending cottage cheese, cheddar, and taco seasoning for a smooth, flavorful dip. Topped with fresh tomato, jalapeno, cilantro, and red onion, it pairs perfectly with crunchy tortilla chips or fresh veggies, making it an easy and quick appetizer or snack for any gathering.

Ingredients

Dip Ingredients

  • 1 cup cottage cheese (2%)
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk (almond milk used, add more if necessary)
  • 2 teaspoons taco seasoning

Toppings

  • Finely chopped tomato
  • Finely chopped jalapeno
  • Finely chopped cilantro
  • Finely chopped red onion

For Serving

  • Tortilla chips

Instructions

  1. Blend the base: In a high-speed blender or food processor, combine the cottage cheese, shredded cheddar, milk, and taco seasoning. Process until smooth, pausing to scrape down the sides with a spatula as needed. Add more milk if the mixture is too thick to blend smoothly.
  2. Heat the dip: Transfer the blended mixture to a medium microwave-safe bowl. Microwave on high in two increments of 15-20 seconds each, stirring once halfway through and once again at the end to ensure even heating and a smooth, melted texture.
  3. Add toppings and serve: Sprinkle the finely chopped tomato, jalapeno, red onion, and cilantro over the warm dip. Serve immediately accompanied by tortilla chips or fresh vegetables for dipping.

Notes

  • Use almond or any milk of choice to adjust the dip consistency and keep it lighter.
  • For a spicier kick, increase the amount of jalapeno or add some cayenne to the taco seasoning.
  • This dip can be made ahead and reheated in the microwave before serving.
  • Substitute cheddar with a sharper cheese if preferred for stronger flavor.
  • To keep it vegetarian, ensure the taco seasoning does not contain animal-derived ingredients.
