A quick and creamy Cottage Cheese Fettuccine Alfredo recipe that uses cottage cheese and parmesan to create a smooth, delicious Alfredo sauce. This healthier twist on classic Alfredo combines simple ingredients for a comforting, protein-rich pasta dish ready in just 15 minutes.

Ingredients

Pasta

  • 10 oz fettuccine pasta (or pasta of choice)

Sauce

  • 1 cup cottage cheese (nonfat preferred, but 2% or 4% works too)
  • 1 tablespoon butter
  • 3 garlic cloves (minced)
  • 1/4 cup parmesan cheese (grated)
  • 1/2 teaspoon ground black pepper
  • 1/2 cup milk (chilled, unsweetened almond milk used)
  • Salt to taste

Garnish

  • Grated parmesan cheese
  • Fresh parsley

Instructions

  1. Cook Pasta: Begin by cooking the fettuccine pasta to al dente according to the package directions. Be sure to add salt to the boiling water to season the pasta.
  2. Prepare Garlic and Butter: Add the minced garlic and butter to a small bowl and microwave gently for 30-45 seconds. If needed, heat for another 30 seconds until butter is fully melted and bubbly. Alternatively, you can sauté the garlic in butter on the stovetop.
  3. Blend Sauce Ingredients: In a blender, combine the cottage cheese, melted garlic and butter, grated parmesan, milk, and ground black pepper. Blend for 1-2 minutes until the sauce is perfectly smooth and creamy.
  4. Season Sauce: Taste the Alfredo sauce and add salt as needed to balance the flavors.
  5. Drain Pasta: Once the pasta is cooked, drain well and let it sit for about 5 minutes to cool slightly.
  6. Toss Pasta and Sauce: Pour the smooth Alfredo sauce over the pasta and mix thoroughly to coat every strand.
  7. Adjust Seasonings: Taste the pasta with sauce and adjust seasoning if necessary for salt or pepper.
  8. Garnish and Serve: Garnish with extra grated parmesan and fresh parsley leaves before serving. Enjoy this creamy, healthier version of Fettuccine Alfredo!

Notes

  • You can sauté garlic in butter instead of microwaving for enhanced flavor.
  • Using chilled milk helps achieve a smoother sauce texture when blending.
  • Nonfat cottage cheese lowers fat content, but 2% or 4% can be used for creamier sauce.
  • Leftover sauce can be stored in the refrigerator for up to 2 days and reheated gently.
  • Feel free to substitute almond milk with cow’s milk or other plant-based milks as preferred.
