These Cottage Cheese Egg Bites are a protein-packed, creamy breakfast or snack option perfect for meal prep. Made with eggs, cottage cheese, and your choice of cheese and optional add-ins, they are baked to fluffy perfection and can be easily customized to your taste. Quick to prepare and versatile, they make a delicious, low-carb alternative to traditional egg dishes.

Ingredients

Main Ingredients

  • 8-10 large eggs
  • 1 cup cottage cheese
  • 1/2 tsp fine sea salt (or to taste)
  • 1/4 tsp freshly ground black pepper (or to taste)
  • 1/2 cup shredded cheese (such as medium cheddar or mozzarella)

Optional Add-ins

  • 1/2-1 cup optional add-ins (such as cooked bacon, spinach, bell peppers, mushrooms, or herbs)

Instructions

  1. Preheat: Preheat your oven to 325˚F. Spray a non-stick muffin tin with cooking spray to prevent sticking. If using silicone muffin cups, spraying is not necessary.
  2. Blend: In a blender, combine the eggs, cottage cheese, salt, and pepper. Blend until the mixture is smooth and well combined, creating a creamy base for the egg bites.
  3. Add Cheese and Divide: Place shredded cheese or your chosen toppings evenly into each muffin cup. Then pour the blended egg mixture evenly over the cheese and add-ins, filling each cup about three-quarters full.
  4. Bake: Bake in the preheated oven at 325˚F for 22 to 25 minutes, or until the edges and centers are fully set and the tops are firm. Alternatively, you can use an air fryer set to 300˚F for 12 to 14 minutes, covering lightly with foil if browning too quickly.
  5. Rest: Once baked, allow the egg bites to rest in the muffin tin for 5 minutes before removing. This helps them set fully and makes them easier to remove.

Notes

  • You can customize these egg bites with a variety of add-ins such as cooked bacon, spinach, bell peppers, mushrooms, herbs, or other favorite ingredients.
  • Using silicone muffin cups eliminates the need to spray the pan.
  • For an air fryer, cover lightly with foil if the egg bites are browning too quickly.
  • These egg bites store well in the refrigerator and can be reheated in the microwave for a quick meal.
